About The Founder
A third-generation baker, Pamela spent her teenage summer months in her grandparents’ bakery packing allergy-free health foods. Resolved to build a company to fill the need for great-tasting gluten-free foods, she left the family business to start Pamela’s Products. Products are formulated and produced to be wheat-free and gluten-free. Products are produced in a facility which also makes products containing: peanuts, tree nuts, dairy, eggs and soy.
Organic Natural Evaporated Cane Sugar, Brown Rice Flour, Organic Cocoa Powder (Processed With Alkali), White Rice Flour, Tapioca Starch, Chicory Root, Sweet Rice Flour, Grainless and Aluminum Free Baking Powder, Sea Salt, Natural Flavor (Contains Corn Derivative), Xanthan Gum.
1 Bag Pamela's Mix; 2 Eggs, large; 1/2 cup oil; 1-1/4 Cup water. Put all ingredients in bowl and mix by hand to incorporate. Do not overmix. Pour into two lightly greased 8 inch round pans. Bake in preheated 350 degrees F oven for 25 to 30 minutes, or remove when top of cake springs firmly back to the touch. If making one layer, use 8 inch square pan and bake for 38 to 42 minutes. Frost with your favorite frosting, whipped cream, powdered sugar, cover with berries, or nothing at all!

This being said, these brownies have HUGE chocolate chunks in them. I didn't know this was mixed right in there, and let me tell you it made a great brownie even better! I have a love-hate relationship with these packets, though, because I honestly can't stop eating them after they're made.
For what it's worth, it's true what the pack says. DON'T OVERCOOK. They're really good a bit goo-y anyways!
As I was reading the instructions of what to add - it included egg and milk. I remember thinking how is this dairy free if I need to include milk? I thought I would use coconut milk, but then I turned the package over and saw that they listed "alternative" substitutions. They suggest using Club Soda (Seltzer) instead of milk and reduce it from 1 cup to 3/4 cup. I figured let me try it. I followed their easy baking instruction and with fingers crossed - set it in the oven to bake.
My home smelled wonderful from the aromas of the spice cake! I couldn't wait till it was done to try it. I kept testing the cake as recommended on the back of the package and pulled it out of the oven when it was done according to their directions. I let it cool but couldn't wait. I cut a piece, added homemade coconut milk whipped cream and dug in! It was heavenly delicious!
If you or anyone in your family has food allergies and you're looking for something truly delicious (and easy) to make - I highly recommend Pamela's Spice Cake! It won me over and I will probably start using a lot of their other products as well! Enjoy!
