Of course, what do you think my wife got me for my birthday last week?
This last weekend, I set the unit up and used the 10mm grinding plate to grind up 8 pounds of pork shoulder & 2 pounds of pork fat (a double batch) to put together my favorite recipe for Italian Sausage. I will tell you that after cubing the pork and freezing it for 15 minutes in order to make it easier to grind, it took less than 4 minutes to run this through the grinder - WOW!!!
I added my salt, sugar, fennel seeds, pepper, nutmeg, and the rest of my "Secret Recipe" into the ground pork. I installed the Beaner Plate and largest sausage stuffing tube onto the front of the grinder and within 30 minutes after that I had just short of 10 pounds of my favorite Italian sausage links ready to eat.
After our evening meat that night, there was only 8 pounds left :), but I am going to "try" and save it for when my kids and grandchildren come over next Sunday for dinner.
I know that this grinder is more expensive that quite a few of the other grinders, but trust me that the old saying, "You Get What You Pay For" is 100% True - especially with this meat grinder. I have to tell you that I'm not into "Pretty Things", but this grinder is exactly what they say - "A Beauty and a Beast!!!
P.S.: OK - I'll tell you the recipe I used for my Italian Sausage as I will bet some of you want to know what else I used.
Here's the recipe for a single batch.
4 pounds pork shoulder
1 pound pork fat
40 grams kosher salt
35 grams sugar
20 grams toasted fennel seeds
6 grams cracked black pepper
4 grams ground nutmeg
1 cup minced fresh parsley
1 head garlic, peeled and chopped
3/4 cup dry sherry
3/4 cup sherry vinegar
Note that you will need about 15 to 18 feet of hog casing for 5 lbs.
I might add that if you don't want to stuff this in the casings, you can just make patties out of it and they fry up beautifully and are really good for Sunday morning breakfast with eggs, toast and hash browns
I have ground chicken (partially frozen and cut into strips), pork butt (made into sausage), beef (mixed with pork to make meatloaf) and the machine has done a wonderful job.
The cleanup is a pain, but well worth if it you do it right. Hand wash everything. Takes 10 minutes. Dry it and I use a food-quality spray silicon to coat and protect the blades.
The directions say nothing about the parts not being DISHWASHER SAFE . It simply states do not use bleaching solution ? ok so what if it Changes color a little fine but they actually have a black substance that wipes off of them now! Maybe they should say HAND WASH ONLY ! next time I'll be sure to buy one that is all STAINLESS PARTS for $50 more dollars I think it would have been worth it !
