Simplify your steamed Xmas puddings

Xmas puddings have been a tradition in our home for at least 35 years. We used to struggle with a 2 quart bowl filled with a pudding mixture, topped off with fabric held in place by string and floated in a kettle of boiling water. The puddings cooked for hours and sometimes never really "set" in the center. We shopped locally for a pudding tin and came up empty handed. Shopping on the internet brought the pudding tin world into our home. We selected the Patisse pudding mold because it has a snap-on lid that seals so well there isn't an outside-inside exchange of moisture. The hollow inside core allows steam to cook the interior of the pudding and we no longer have to live with a perfectly cooked exterior and raw center. Over the years we've used up a few of these pudding tins because the tin coating isn't hot dipped, instead its electronically bonded like the tin plating on a soup can and eventually rust takes over & we are forced to replace our old tin with a new one. That just happens to be the way a majority of pudding tins are made today. We will continue to buy the Patisse tins as long as we make puddings. Our holiday family gatherings are gradually increasing in size as more members are added and our next tin may have a three liter capacity.

Work well, but develop holes over time

I bought these for making traditional Christmas pudding. I got two Christmases out of them (well maybe one should have been the limit). Traditional Christmas pudding is made the first Sunday of advent (stir-up Sunday, about a month before Christmas), and the pudding is stored to ripen and rest until Christmas. The first year I had no problem, but the second year (this one), after the puddings were removed and the molds washed, I noticed about a dozen little 2-4 mm holes in the bottom and sides of the molds. They melted! Just like aluminum foil, long exposure to the oils or other ingredients in the puddings had broken them down. So I'll be looking for a copper mold next year.

For the price, this is more than acceptable. The only negative is that it cannot be lifted by the lid once the pudding mixture is in it. The lid is held on by a couple of dimples that clip under the rolled edge; they work fine when it's empty, but are useless when there's any weight on them. So, plan ahead and use a pot that's large enough to allow you to reach in and lift the mold out.

I looked everywhere and no one had these tins - not even Willams Sonoma! As always, Amazon came to the rescue! They even arrived prior to the original promise date, which was wonderful. The tins are perfect (I bought two), excellent quality, the lids and seals stayed in place and the puddings came out beautifully. They are currently curing in cognac waiting for Christmas. Exactly what I wanted, with the exception of the size. Most steamed pudding recipes call for 12 cups, and this only holds 8, so you have to cut recipes down. But other than the size issue, it performs beautifully. I've made several puddings in it around the holidays, including the traditional plum pudding, with great results every time. Would highly recommend. Wish they had a larger one on offer.

Habe diese Wasserbadform zum Herstellen von einer norddeutschen Speise gekauft, sie heißt Großer Hans. Auch Dithmarscher Kohlpudding, Mehlbüddel oder Brotpudding werden in ihr zubereitet (Konsistenz so ähnlich wie ein großer Kloß). Die Form kommt verschlossen in einen (sehr großen) Topf ins Wasserbad und köchelt je nach Rezept/Zubereitung bis zu zwei Stunden vor sich hin. Ich sprühe sie vor dem Befüllen des Teiges leicht mit Backspray ein und kleide sie mit Semmelbröseln oder Paniermehl aus. Leider habe ich hier auf dem Tablett kein Foto vom Ergebnis, aber der Große Hans kommt makellos-schön aus der Form - und schmeckt hervorragend. Dazu kann man z.B. Kirschkompott reichen. Die Form verfärbt sich mit der Zeit, siehe Fotos, schadet nichts. Nicht für die Spülmaschine geeignet, lässt sich aber ganz leicht abwaschen. Für mich hat sich der Kauf gelohnt!
