Don't use it with your salad or as un-cooked flavor aid! For these, you have to use the "Sheng Chou" -the light soy sauce, which is aged less and optimized as a dressing, say when you mix your dumpling sauce or putting it on top of your freshly seasoned tofu.
Not too watery, not too think like gravy, it's just right.
Color is dark brown, very dark looks black in the bottle but is really brown when mixed with meat, vegetables, or gravies and sauces.
Flavor is excellent. Flavor strength right out of bottle is strong. Added to other material can be adjusted to your liking.
Main flavor is fermented soy beans, secondary flavor is light mushroom, followed by a hint of vinegar. The total flavor body is complex.
It's much more gentle on your taste buds than either Kikkoman or Shoyu.
I use it in meat stir fry and fried rice, as a beef and or pork marinade, even on salads and sea food, and where I've traditionally used Worcestershire sauce
I use it in gravies as a darkener and flavor enhancer.
1 complaint, if it IS a complaint, is that it could have a little bit more mushroom flavor.
I guess I call it "an all purpose seasoning".
Update: I have really grown to like this stuff, and it is now my favorite. Since it is stronger than supermarket soy sauce, I can use less. Rating increased to 5 stars.
