About the Author
Chef Valerie Wilson, also known as Macro Val, has been in the food industry for over 32years. She has been living a vegan, macrobiotic, whole foods life style since 1993. She started teaching cooking classes in 1997 and still teaches in South Eastern Michigan. The first edition of her Perceptions cookbook came out in 2001. Her second cookbook, Healthy and Delicious Cooking Spring Season, came out in 2015. Chef Val hosts her own internet radio show twice a month, REAL FOOD with Chef Val, does lifestyle counseling, and is ServeSafe certified and licensed in the state of Michigan, she has been a regular writer for two holistic magazines in her state.
