Here is a very convenient kit that a) is really not expensive, b) has all you need to get started in home pickling (except bottle and ingredients!), and c) even has the hole in the lid! It also has a booklet with starter tips and recipes.
Mine has already been used in three brine pickling projects and has been an excellent investment.
This kit has a white plastic wide mouth mason jar storage cap drilled with a hole for a 3/8" grommet. It also includes an "S" type airlock (mine arrived broken), a white rubber seal for the cap, a "stainless steel" pinch cup, a small pouch of salt, a DVD and some instructions. It all comes packaged in a pouch that is not sturdy enough to protect the contents, as I later found out when I discovered the airlock was cracked. The salt is nice, the Celtic Sea Salt brand, but it's a very small pouch- only enough for 1 or 2 ferments.
I did use the products in the kit, but I pulled the steel cup out of my ferment after a couple days because it looked pretty sketchy. I also had to replace the airlock, which is how I discovered how to make something like this for myself.
If you have a drill and access to a homebrew supply store, you can get everything you need to get started. Frustratingly, the grommets were the cheapest component but also the hardest part to find. The 3/8" grommet is a food grade rubber, at the homebrew store I just told the salesperson what I wanted to do and they picked the right thing, online you can find them listed as replacement rubber grommets for fermentation buckets. DON'T use a grommet from the hardware store- they're not food grade. The homebrew store also had nicer 3 Piece Airlock, 3 Pack of Airlocks. 3x 3 Part Bubbler, Econo-Lock and drilled bungs that will fit in a ReCap lid (if you have some of those). A number 6 bung will fit the ReCap, but the 5-1/2 fit better.
Many stores carry canning supplies, the Ball Wide-Mouth Plastic Storage Caps come in an 8 pack, and at Ace they also had the Harold Imports Silicone Canning Jar Gasket Ring (Set of 4) (these can be trimmed to fit inside the wide mouth lids). Regular drill bits chew up the plastic lids, but I had great success with a spade type bit meant for wood. I used a 1/2" Irwin Speedbor Flat Bit after I cracked several lids with my regular bit. To drill the lids, I used a couple of clamps like these: IRWIN Tools QUICK-GRIP Handi-Clamp, 2-Inch (59200CD) to clamp the lids across a narrow piece of 1 x 2, leaving the area to drill through off the edge of the wood. The clamps held the cap securely so it didn't twist while drilling. After drilling and washing the lids, the grommets popped right in and the airlocks were nice and snug. I trimmed the silicone seals to fit inside the lids, and in less than 1/2 hour I had 8 sets of fermentation caps.
If you like sauerkraut, kvass, kimchi or any other fermented foods, I'd avoid this kit and use the supplies I liked to above to make your own. Even if you have to buy the drill bit and clamps, one lid would cost less than the Perfect Pickler. And if you like fermented food, you're going to want a LOT more lids- I currently have 2 jars of kraut, 1 of sour beets, 2 of beet kvass, 3 of kimchi, 2 radishes and 2 giardiniera, and I've only been at this for a week and a half.
A real key to good flavor and the health benefits of this style food is the quality of the salt you add, sea salts and mineral rich salts are very important, enough that they sent some in the package. Do not use white table salt, or you are cheating yourself. This is lightly touched on in the easy to read instructions, by all means read them, follow them, they are simple and you will have a great product.
