Remember, I was the owner of Billy Boy's Bakery in Detroit Lake, Oregon. I also was the founding Vice President of an attempt to franchise my pies (by an Oregon businessman) as Billy Bob's Pot Pies in Canby, a city about 100 miles west of Detroit Lake.
Shortly after helping launch that franchise, I departed the USA for life as an expat. I explain all of this so you understand, when I state this booklet is among the best I've come across, you will not see that statement as merely the ravings of some rank amateur.
The advice on preparing a flaky pie crust is better than most writers. I only wish the writer had inserted a link to a video so readers could better undestand the process. Too many homemakers I have known, are so afraid of using too much water that they over-react.if you use ice-cold water and mix the water in bit by bit until you have the workability described by the writer, you will get a great pie dough. Just don't over work it.
The only other wish I would have, would be for the inclusion of some savory pies. Oh well, guess I'll have to write that one myself.
Meanwhile, I heartily recommend this book to anyone seeking excellent advice for making dessert pies.

What I love about this cookbook is that all the recipes are much easier to make than I thought.

Love this cookbook!
It took me back to my high school cooking classes & the pie making basics I learned so many years ago. Those lessons have served me well. I'll admit that I don't make pies as often as I used to, but this book has encouraged me to do so again.
There are practical tips for crust making & delicious recipes included. I highly recommend it.

If I could only recommend one "pie" book for a new baker, it would be this book.... lots of good information and easy to understand.
