What does saffron taste like?

The best saffrons of the world are saffrons that are deep red or orange filaments. The best quality saffrons should have a warm, floral aroma with a delicate, honey-like, earthy taste and bitter back notes.

My Saffron does not have a strong aroma why is it?

Some people may enjoy more of a pronucecd saffron aroma but the area of the stiga in which is associated with and responsible for aroma or the chemical responsible for aroma come from the white area of the stima.  This part of the saffron stigma is a much cheaper lower grade commonly associate with more commerical saffron.
 

What is Saffron?

Safranal brings saffron its characteristic odor and fragrance. Crocin, which delivers the intense orange color, is an indication of this spice's medicinal qualities, via its powerful carotenoids and antioxidants that can protect your body from free radical damage.

Where does the taste of saffron come from? 

The flavor of saffron come from Picrocrocin it is a bitter taste, and is the chemical most responsible for the taste of saffron.
  
Saffron is a spice derived for the flower of the Crocus sativus or autumn crocus .  This autumn flowering perennial bulb bears up to four flowers each containing three vivid red crimson stigmas.  To produce a single pound of saffron it can take up to 75,000 blossoms.  The reasons saffron is so expensive is due to the amount of labor involved in both growing, harvesting and processing of the plant.  All saffron cultivation is done by hand and to grow saffron it take a unique climate of friable, loose, low-density, well-watered, and well-drained clay-calcareous soils with high organic content.

Recommend user tip for saffron: for best coloring, when using any Saffron, slightly grind saffron with mortar and pestle and add to steeping liquid. Soak the saffron threads
   
The most effective way to draw the flavor and color out of saffron is to submerge them in a hot liquid. You essentially want to soak them thoroughly before adding them to your recipe. In most cases, letting it sit in the liquid for 10 to 20 minutes is enough to prepare the saffron but we prefer overnight as recommended in the user tip above

Measure the saffron threads
    Most recipes will usually indicate how much saffron to use. A general rule for saffron that is always good to know is; Saffron is usually measured in grams, the number of threads, or “pinches.” A “pinch” typically means 20 medium-sized threads of saffron. Use a food scale or count the threads to measure out the saffron. Adding too much saffron can ruin a dish we suggest erroring on the side of too little. You can always add more if the taste and color isn’t to your satisfaction.

  • As with any recipe, weighing a product for use is the most accurate and consistent approach.
Crush the threads
      For saffron to shine in your dish, you need to ensure that its flavor and color are released. The quickest way to do that is to break down the threads. Saffron threads are very delicate, so it’s easy to crush them with your hand. Use your thumb and forefinger to gently grind the threads into pieces. However, if you prefer a more uniform look to the pieces of saffron in your recipe, use a mortar and pestle to crush the threads as is traditionally as is traditionally done.
  • Crushing saffron for use in recipes typically works best if you’re making a recipe that already has water or another cooking liquid in it, such as risotto or paella.
  • Keep in mind that crushing saffron by hand or with a mortar and pestle doesn’t offer the most attractive appearance because the threads are no longer intact. However, you can still get a strong flavor, aroma, and color from crushed saffron.
