My 4-star rating is specific to this paperback version. First of all, the content is great and contains everything that was in the original. This book is HUGE. In order to cram all of that content inside, it's become quite thick and the print is very small. It's just not reasonable to open up this copy on the counter while you're working, and that impact on usability is why I removed a star. I still think that as a backup, or for the cook who doesn't have a "kitchen bible," this is a must have and is worth every penny. The recipes contained within are "real food" made with real ingredients... optimized for taste and quality and not some fanatical health fad or diet.
My only complaint of sorts in this paperback is compact and the print is fine (small point size) and the paper can readily absorb food splashes from somewhat sloppy cooks like me...if those are problems for you, then buy the hardcover edition. Either way it is a great kitchen resource for folks cooking with limited time to spend on complexities that are often low value tasks.
At any rate, I would have preferred the SOFT COVER with PICTURES, BUT there is still everything you need to know about how to cook in this useful tool. If you have never cooked before, this book will easily teach you methods, basic recipes and how to modify them, standard cooking times and temps, when to buy your fruits and vegetables, and how to substitute among so many other things.
