Initial start up was easy. I Followed the directions in the manual to a T. The fan and auger started up right away and the heating rod heated up very fast. To burn in the smoker they recommend heating it up to 350* for 35 to 40 minutes. It didn't take long to reach the temp. After that i dropped the temp to the smoke setting to smoke 40lbs of homemade bacon.
The final product came out perfect. The smoke is clean and just the right amount. It holds a decent temp but that could be worked on more in future models. I'm personally not looking for temps within 5degrees of what i set out for so If you require exact temps maybe it's not the smoker for you. I would say it's within 10* within its temp.
The way it works is really similar pellet grills like traeger and rectec grills being that it convects the air throughout the smoker and auto feeds pellets with an auger. The biggest difference is the space. You have more space for food and the smoker itself takes up less space.
Cleanup is simple. I would recommend a shop vac to clean out the burnpot after smoking and cool down. The door comes off easy and cleaning it after every use is a must if you want to see the food you are smoking. Warm soapy water and a non abrasive pad for smoking components works for me. Also works for inside the smoke cabin.
I'm happy with my purchase. Happy with the results. Happy with the ease of use. The only thing i worry about is the longevity and reliability in the long run. I would recommend this to anyone
This thing has 6 large racks that measure approximately 14 x21 inches each and the pellet hopper holds 60 lbs of pellets and has a clean-out door in the bottom in case you need to change out the pellets for a different kind. Very nifty!
I did the initial burn in at about 350°F to get rid of any oils or chemicals used in manufacturing and for the first 15 minutes or so it has an off smell as you might expect but then it went away.
My first cooking session was not to cook but to see how the temperatures held and how long it took it to heat up, etc. which I was very pleased with.
Like most other pellet grills and smokers, it works on average temperature sort of like your home oven. You set the temperature but it swings about 20°F above and below that number and maintains an average of your set temperature. Some people do not like this but if you don't worry about it, you'll find that it cooks just as good as it would if it held a steady temperature.
I have tested my $8000 Thermador in my home and it swings at least 20°F in both directions while it cooks. The funny things is, the dial thermometer in the front shows it staying right on the money.
The Copperhead puts out plenty of smoke and like most pellet poopers, more smoke happens at low temperatures and less smoke at higher temperatures. I recommend starting everything in "Smoke" mode for about an hour and then you can turn it up to a normal smoking temperature of 225 or even higher if you like.
I have smoked 2 Tri-tips, a full pork loin and some meatballs so far and everything has turned out really good. Nice smoky flavor, beautiful smoke rings, etc.
The Copperhead is really easy to clean as there is a large water pan in bottom that catches most of the grease and drippings. The glass front is pretty easy to clean with warm water and a sponge or cloth. If you do that after every cook, it comes off easier than if you let it go for a few times.
All in all, I really like it. I can't speak for it's longevity as I just got it but I think if you keep it in the dry and keep it clean, it will be a long lasting unit. Time will tell.

I bet you're wondering if there's anything I didn't like.. well yes. A thing or two.
The door seems to have a small issue as it would not close all the way without applying quite a bit of pressure.. maybe the hinges are bent slightly. I adjusted the latch and now it seems to be fine.
Also, it did not come with a cover and I had to order one. A big unit at this cost should come with a cover and the customer should not have to purchase that separately.
The reason even more so to go with Pit Boss is the top tier customer service. I had a few issues that were self inflicted and the response was phenomenal. They went above and beyond when it wasn't their issue to fix.
