Product Description

Cooking pizza from scratch is becoming more popular among enthusiasts and the economically-minded alike. Making pizza at home leaves you free to experiment, select the best ingredients, and save the money you'd have spent tipping the delivery guy.

This Pizzacraft baking stone is perfect for pizza, bread, pastries and other food, eliminating hot spots while cooking, and producing a uniformly browned crust. Just like food baked in a professional brick-lined oven – but it's from your kitchen or grill.

This stone is also convenient for heating and re-heating ready-made frozen pizzas and baked goods. Easy to maintain as the stone requires no seasoning or conditioning. Thermal shock resistant.

HOW TO USE: For best results, pre-heat oven to 500° F (260° C) and place stone in middle of oven on lowest rack. If using a grill, preheat to same temperature and place on middle of grill for 30 minutes. When it is time to bake, dust stone with cornmeal before placing baked goods on top. For fresh pizza, a flat metal spatula or a pizza peel dusted with cornmeal works well for transferring food to the baking stone. Alternatively, wearing an oven mitt or glove, remove the hot stone from the oven, place pizza on the stone and return both to the oven or grill.

This baking stone can be used for bread, pizza and other baked goods. Please keep in mind that some foods, such as bread and pizza, will do well baked directly on the stone, while others may require a thin layer of foil between the food and the surface of the stone. The layer of foil will promote optimal baking for certain types of food such as cookies.

CARE: This cordierite baking stone is extremely durable and will not crack because of thermal shock. There is no need to soak the stone in water before use.

To clean, scrape off any excess food with a spatula. When the stone has cooled, run it under hot water while scrubbing with a brush. Do not use soap on the stones as it may leave a soapy aftertaste. The natural properties of the baking stone will cause it to darken and spot with age – do not attempt to remove this discoloration. Air-dry the stone and store inside the oven.

We have been cooking on round pizza stones for 15 years now at our house- so we are well aware of how to use it. We bought two of these products just for a change from the round stone.
From the first day, the pizza burned on there terribly. My husband scrapped it off and decided to chalk it up to first time usage, next time will be better. Well, we used it again, and same thing- completely burned an the pizza stuck to the stone. Yes, we used corn meal on the bottom.
I have pictures to show the damage, but needless to say, we are very disappointed in this product and have gone back to the round stone-- (to date we have not had any issues with our round stone)

As far as appearances go, this pizza stone is utilitarian all the way. It is just plain pinkish beige-ish stone. But that's probably not why a person buys a pizza stone anyway, right? So, to the real matter at hand. This stone is a half inch thick, which is nice considering that most stones with a lower price point tend to be 3/8 of an inch thick. The result is a stone that is more durable and resists thermal shock (aka....doesnt crack due to extreme changes in temperature). Most notably, you can use it and then take it out of the oven with your pizza and place it on your stove or what have you without any ill effect. I dont use a paddle, so i can attest to its thermal shock resistance, as it goes back and forth between the oven and stovetop at least once a week, and often twice. Which segues into my next part, which are the pizzas themselves. The idea is to cook a pizza whose dough cooks all the way through if possible with even heat distribution. This stone definitely does that like a champ. We make pizza doughs without oil or dairy and with alternative flours such as tapioca and garbanzo flour...they can be problematic without a good stone. Ours come out delicious each time. So, for us, at the sale price of $28 at the time we bought it, this stone has been great. It is both durable and effective, and really, what more could we ask for? Glad to own it for sure.

Not the most expensive stone you can buy, but it has all the quality you need. The product discription doesn't say so but this stone is over 1/2" thick, which is way better than the 3/8" thick stones generally found in this price range. The stone arrived intact and well packed in 2 boxes, one from Amazon and the OEM box. The manufacturer says this stone is not susceptible to thermal shock and will not crack due to changes in temperature going from the oven to the table and vice versa. I don't intend to test this claim; but it gives me a warm fuzzy to have this assurance. I have only made one pizza since the stone arrived on 1/4/12 so I will update this after I have more data, so far so good though.

This pizza stone stinks and will not stop stinking. And I know how long it should smell. I have made several pizzas on this stone, have even placed it in the oven for hours just to remove the smell, yet it persists. I think it is a manufacturer error or just a bad item. Meanwhile, the round one I have from BB&B is a replacement for my old one which broke after a while, is just fine, does not smell or create a noxious odor, and it is made from the same type of material. This one is just BAD.

I am so sorry to hear that you experienced this. It must have been very inconvenient and uncomfortable to deal with the smells coming from the stone, especially over repeated uses.

We try to educate customers about all our products before purchase, and we are sorry that we were not able to get accurate information to you before you bought your stone. This stone contains cordierite, a natural mineral that strengthens thermal shock resistance. This is why your stone will not crack during high-heat use. Some people find that the first time they heat the stone, there is an odor. Ideally, this non-toxic smell will disappear with use.

However, it sounds like the smell from your stone has not gone away after many uses. We're truly sorry this was the case for you.

We purchased this product to replace a Pampered Chef stone that randomly cracked one day when removed from the oven to cool. This product is superior due to being almost 1/2" thick and unlike the old stone, the manufacturer actually recommends preheating it in the oven. We haven't owned it long enough to see if it survives the test of time, however we've taken it out of the hot oven and placed it on the countertop numerous times without incident. This item is packaged really well and was received promptly. As with any stone, until it is fully seasoned there will be a slight odor when using it (new stone smell..haha).

Cordierite is a mineral; presumably this is a synthetic ceramic that is mostly cordierite. This stone is too uniform to be a natural material. In any case, it's big. Fifteen inches is the full depth of many ovens, and it's THICK. I've seen pizza stones that are barely a quarter inch thick, and this one is nearly twice that. Since the purpose of a baking stone is to hold heat, thick is good. Synthetic cordierite is also resistant to thermal shock, so this stone is unlikely to crack from high temperatures.

I use mine in two ways. When I'm baking French bread, the stone goes on a lower rack to hold heat and keep the oven temperature constant, and the baguette pan with the loaves goes above it on a middle rack. For free-form loaves like bauernbrot, I bake directly on the stone. Works great either way. Of course, the stone goes in while the oven is cold and preheats along with the oven. Amazon doesn't allow links, but you can find some of my bread recipes by searching on "emory cottage bread."

If you're going to bake directly on the stone, you'll need a pizza peel, and Amazon has those. I have the Kitchen Supply 14-Inch x 16-Inch Aluminum Pizza Peel with Wood Handle. Let the free-form loaf rise on the pizza peel. To keep it from sticking, put a square of baking parchment on the peel and put the bread on the parchment. The parchment goes in the oven right along with the bread.

The description says you can use this on a grill, presumably charcoal or propane. I haven't used it that way, but considering the characteristics of cordierite, I don't see why it wouldn't work. Remember, 15" is big. Measure before you order.
