Traditional Italian Waffle Cookies
The cutest Pizzelle's you have ever seen Pizzelle (pronounced with ts sound, like pizza) (singular pizzella) are traditional Italian waffle cookies made from flour, eggs, sugar, butter or vegetable oil, and flavoring (often vanilla, anise, or lemon zest). Pizzelle can be hard and crisp or soft and chewy depending on the ingredients and method of preparation. Pizzelle were originally made in Ortona, in the Abruzzo region of south-central Italy. The name comes from the Italian word for round and flat (pizze); this is also the meaning of the word pizza. Many other cultures have developed a pizzelle-type cookie as part of their culture (for example, the Norwegian Krumkake). It is known to be one of the oldest cookie.] Pizzelle are known as ferratelle in the Lazio region of Italy. In Molise they may be called ferratelle, cancelle, or pizzelle. The cookie dough or batter is put into a pizzelle iron. The iron stamps a snowflake pattern onto both sides of the thin golden-brown cookie, which has a crisp texture once it is cooled. Pizzelle shaped into a cannolo and filled with an orange-almond creme. Pizzelle are popular during Christmas and Easter. They are often found at Italian weddings, alongside other traditional pastries such as cannoli and traditional Italian cookies. It is also common for two pizzelle to be sandwiched with cannoli cream (ricotta blended with sugar) or hazelnut spread. Pizzelle, while still warm, can also be rolled using a wooden dowel to create cannoli shells.

The machine is easy to set up and clean. The pizelles cook for 45-60 seconds. The one problem is that the mold is shallow so it's very hard to get a good edge on the cookies. I purposefully overflow the mold a little so the four cookies come out in one sheet. Then, while they're still very warm and soft, I cut them out. At first I used scissors, then I discovered that a 3" biscuit cutter works perfectly!
One recipe makes about four dozen cookies and I can make that, from beating the egg, to trimming the last cookie, in an hour.
The first maker I was sent made a popping sound and formed a crack in the metal body. Amazon had a replacement to me in two days and it has performed beautifully for probably 20 batches in three weeks.
A year ago I have ordered 3 Pizzelle Makers, because I could not find Villaware Pizzelle Maker anywhere.
I haven't used them until few months ago, I baked maybe 4 or 5 times and the black coating on the plates is coming off, and I hate the thought of heaving that in my food. I am not really sure it is safe to eat the pizzelles.
I have a 15 year old Villaware Pizelle Maker and never had problems with it.
I have never used anything sharp or abrasive with my machines, used only warm, mild soapy water and soft cloth.
I am very disappointing in this product.
I would definitely NOT use a tablespoon of mixture as the instruction state. I found that a small teaspoon of mixture was about right.
I love this little Pizzelle maker. Fast delivery, sturdy, just perfect!
