I like Toni's little stories and the one about her dad holding up the line in a grocery store while making sure he was getting the sale price on an item when she was little, took me back to my childhood and grocery shopping with my mom because she'd do the same thing. Anytime I said "Mom, everyone is looking at us" if mom was taking too long to pick something at the market, or trying to decide if she should put something back, I'd get the same response, "So? They're not paying our grocery bill!" LOL!!
Can't wait til' I try every single recipe from this creative cookbook. I'll post updates as I try the recipes.

The recipes are delicious, quick, and EASY. Did I mention delicious!? Even with a family of picky eaters I can find something in here everyone will enjoy. Being plant based is so important to me and my family and this cookbook is a life saver.

While I think this is a great cookbook for beginner cooks or people new to a plant-based diet, personally, I find the recipes lacking in depth and uniqueness. I love Toni's "my tips" section and use it as I add to the recipes very freely. While it's great tweaking recipes, I find the recipes in this book a little too simple.
Some cookbooks may be a little too elaborate with recipes that take up too much time, but this is the opposite. I don't like when recipes include a lot of store-bought items (I don't have to pick up a cookbook for that). For example, a pasta recipe calls for store-bought marinara sauce. Now, making your own sauce is cheap (cheaper, I'd argue) and doesn't have to take very long. Personally, I feel like there are no big revelations for me here compared to cookbooks like the Oh She Glows ones or books from Isa Chandra Moskowitz, but it's a nice cookbook for when you need a quick dinner.

With that being said, recipes are a great base for a meal, especially if pressed for time, should you use these meals throughout the day, I'd suggest adding your favorite veggies and nuts to the meals to enhance vitamins and nutrients overall !!
.... and the author actually does suggests extras that can be thrown in! She's on the ball!
