About the Author
Lani serves as presenter and celebrity coach for the Physician's Committee and the Complete Health Improvement Project. She is certified in Plant-Based Nutrition from Cornell University and maintains multiple teaching credentials in the State of California,as well as an Advanced Fitness Nutrition Specialist credential with the National Academy of Sport Medicine, along with multiple other certifications. In Muelrath's book, the top areas of particular value to me were (in no particular order):
1) plant based replacements for dairy, eggs and oil (gave specifics; really nice reference table)
2) other people's stories and tips for how they made the transition (again specifics; different ways to transition - really liked)
3) restaurant tips for how to put a meal together if not specific vegan
4) 7-day menu and meal planning (this is big area of re-learning for me - how to put together meals and plan ahead)
The book includes some very simple but delicious recipes, like the Sweet Bean Cream (pictured). Perfect as an oatmeal topping, and an easy way to get more beans into your diet!
As a frequent traveller and a vegan, I particularly enjoyed her insights into plant-based travel and how to take this lifestyle on the road, even in remote locations. You can read my full review of the book and my interview with Lani at (...)
I'm a no-fuss kind of cook. I think healthy cooking should be fun and relaxing, not confusing and complicated. What I like most about the book is the template recipe concept--flexible recipes based on formulas. You can swap out your variables like vegetables or sauces, so the basic recipe has endless variations. Now that is my kind of cooking! I tend to make the same thing over and over again, and this taught me a new method to shake up my old ways.
Also, this book goes deeper than other cookbooks. Real dietary change isn't just about making a few new recipes, it's about confronting your mindset and patterns, so that you really transform into the healthy eater you want to be. I love how Lani Muelrath really goes there--teaching you how to transform your old habits into healthy ones that reflect a commitment to health. Sometimes you just need a little outside support and guidance to get back on track. Can't recommend this book enough to those seeking inspiration for eating a plant-based diet.
