From renowned cardiac surgeon and acclaimed author Dr. Steven R. Gundry, the companion cookbook to New York Times bestselling The Plant Paradox, offering 100 easy-to-follow recipes and four-color photos.
In the New York Times bestseller The Plant Paradox, Dr. Steven Gundry introduced readers to the hidden toxins lurking in seemingly healthy foods like tomatoes, zucchini, quinoa, and brown rice: a class of plant-based proteins called lectins. Many people are familiar with one of the most predominant lectins—a substance called gluten, which is found in wheat and other grains. But while cutting out the bread and going gluten-free is relatively straightforward, going lectin-free is no small task.
Now, in The Plant Paradox Cookbook, Dr. Gundry breaks down lectin-free eating step by step and shares one hundred of his favorite healthy recipes. Dr. Gundry will offer an overview of his Plant Paradox program and show readers how to overhaul their pantries and shopping lists to make delicious, simple, seasonal, lectin-free meals. He’ll also share his hacks for making high-lectin foods safe to eat, including methods like pressure-cooking grains and peeling and deseeding tomatoes.
With a quick-start program designed to boost weight loss and recipes for smoothies, breakfasts, main meals, snacks, and desserts, The Plant Paradox Cookbook will show readers of The Plant Paradox—and more—how delicious it can be to eat lectin-free.

Lose weight and heal your gut with more than 100 delicious Plant Paradox–approved recipes!
In the New York Times bestseller The Plant Paradox, renowned cardiologist Dr. Steven Gundry introduced readers around the world to the hidden toxins lurking in seemingly “healthy” foods: a class of plant-based proteins known as lectins. Found in nightshade plants like tomatoes and cucumbers, as well as in grains, legumes, and conventional dairy, lectins attack the lining of our gut and disrupt the balance of our microbiome, leading to leaky gut syndrome and widespread inflammation, weight gain, and illness.
Now, in The Plant Paradox Cookbook, Dr. Gundry gives fans of The Plant Paradox what they’ve been asking for: more recipes! In this easy-to-follow cookbook, Dr. Gundry shows readers how simple and delicious it is to live lectin-free (or at least lectin-reduced). In addition to an overview of the Plant Paradox program, a pantry guide, and sample meal plans, Dr. Gundry shares more than one hundred recipes designed to help heal the gut, promote weight loss, and quell inflammation.
He also includes simple kitchen hacks—like peeling and seeding vegetables, and pressure cooking grains and legumes—that reduce or eliminate lectin content, making many favorite foods safe to consume. With dishes that cover every meal of the day, including Pesto-Baked Eggs; Lemon, Kale, and Chicken Soup; Spinach Artichoke Lasagna; and Truffled Mushroom Mac and Cheese, and decadent desserts such as Chocolate Mint Cookies, Pistachio Ice Cream, and Olive Oil Rosemary Cake, Dr. Gundry makes it easy for everyone to clean up their diets and live lectin-free.

About the author

STEVEN GUNDRY MD, F.A.C.S., F.A.C.C., is a cum laude graduate of Yale University with special honors in Human Biological and Social Evolution. After graduating Alpha Omega Alpha from the Medical College of Georgia School of Medicine, Dr. Steven Gundry completed residencies in General Surgery and Thoracic Surgery at the University of Michigan and served as a Clinical Associate at the National Institutes of Health for years. There, he invented devices that reverse the cell death seen in acute heart attacks; variations of these devices subsequently became the Gundry™ Retrograde Cardioplegia Cannula. It has become the world's most widely used device of its kind to protect the heart from damage during open-heart surgery. After completing a fellowship in congenital heart surgery at The Hospital for Sick Children, Great Ormond Street, in London, Dr. Gundry was recruited as Professor and Chairman of Cardiothoracic Surgery at Loma Linda University Medical Center. There, he and his partner, Leonard Bailey, pioneered infant and pediatric heart transplantation. Together, they have performed more such transplants than any other transplant surgeons in the world.
During his tenure at Loma Linda, Dr. Gundry pioneered the field of xenotransplantation, the study of how the genes of one species react to the transplanted heart of a foreign species. He was one of the original twenty investigators of the first FDA-approved implantable left ventricular assist device (a kind of artificial heart). Dr. Gundry is also the inventor of the Gundry Ministernomy, the widely used minimally invasive approach to aortic- or mitral-valve repair, the Gundry Lateral Tunnel, a "living" tissue that can rebuild parts of the heart in children with severe congenital heart malformations; and the Skoosh™ venous cannula, the most widely used cannula in minimally invasive heart operations.
One of the fathers of robotic surgery, and a consultant to Computer Motion (now Intuitive Surgical), Dr. Steven Gundry received early FDA approval to use robotic-assisted minimally invasive surgery for coronary artery-bypass and mitral-valve operations. He holds patents on devices for connecting blood vessels and coronary artery bypasses without sutures, as well as for repairing the mitral valve without the need for sutures or a heart-lung machine. He has served on the Board of Directors of the American Society of Artificial Internal Organs (ASIAO) and was a founding board member and treasurer of the International Society of Minimally Invasive Cardiothoracic Surgery (ISMICS). He recently completed two successive elected terms as President of the Board of Directors of the American Heart Association, Desert Division.
Dr. Gundry has been elected a Fellow of the American College of Surgeons, the American College of Cardiology, the American Surgical Association, the American Academy of Pediatrics, and the College of Chest Physicians. He is a member of numerous other surgical and medical societies. As a medical researcher, Dr. Gundry has published three hundred articles, chapters, and abstracts in peer-reviewed journals on surgical, immunology, genetics, nutrition, plant-based diets, and lipid investigations.
In 2002, Dr. Gundry met someone who would change the trajectory of his career… and life. He crossed paths with an "inoperable" patient named “Big Ed”. Using a combination of dietary changes and nutraceutical supplements — Big Ed lost weight and cleared most of his arterial blockages. An obese, chronic "diet" failure himself, Dr. Gundry adapted his Yale University thesis to design a diet for himself based on evolutionary genetic coding.
On this diet, he lost weight — to the tune of 70 pounds — and reversed his own ailments, such as migraines, pre-diabetic status, and arthritis. He stopped eating sugar, grains, peanuts and cashews, nightshades and other lectin-heavy foods. Having experienced weight loss and the results of eating a lectin-free and gluten-free diet himself, and inspired by growing research involving the NIH’s Human Microbiome Project, his commitment to better health and longevity through a better diet solidified. His work creating nutraceutical products and supplements advanced.
No longer satisfied with repairing the damage of chronic diseases, Dr. Gundry open his own practice— The International Heart and Lung Institute and Center of Restorative Medicine in Santa Barbara and Palm Springs, California. His mission is to prevent and reverse chronic diseases of "aging" while increasing longevity with diet and nutraceutical products.
In order to help even more people heal themselves, Dr. Gundry began writing books outlining his eating program and eventually, he would create his own supplement line, Gundry MD. He’s always researching new methods, discovering better health solutions, and evolving his wellness philosophies. These theories are outlined in his bestselling books: Dr. Gundry's Diet Evolution: Turn Off the Genes That Are Killing You and Your Waistline; The Plant Paradox: The Hidden Dangers in "Healthy" Foods That Cause Disease and Weight Gain; The Plant Paradox Cookbook: 100 Delicious Recipes to Help You Lose Weight, Heal Your Gut, and Live Lectin-Free; The Plant Paradox Quick and Easy: The 30-Day Plan to Lose Weight, Feel Great, and Live Lectin-Free; The Longevity Paradox: How to Die Young at a Ripe Old Age; and The Plant Paradox Family Cookbook: 80 One-Pot Recipes to Nourish Your Family Using Your Instant Pot, Slow Cooker, or Sheet Pan.
He is now the leading expert on the lectin-free lifestyle as the key to reversing disease and healing a leaky gut. Dr. Steven Gundry freely shares his research on how to maintain a healthy microbiome and live a long, vital life via his best-selling books, YouTube channel, Gundry MD blogs, and weekly health podcast, The Dr. Gundry Podcast.
The Gundry MD site is a resource to learn about which foods to eat, like olive oil and pressure cooked lentils, and which to avoid, such as grains and goji berries. His work on balancing bacteria in your gut and aligning your lifestyle with the proper circadian rhythms has been groundbreaking. And he continues to research blue zones, best autoimmune practices, and lectin-free living. Gundry MD also provides information and tips about dealing with challenges like rheumatoid arthritis, Alzheimer's disease, and other health concerns that present in later years of life. He also explores the tenets of the Ketogenic diet (and other diets) and shares his expertise on all things “lectins”.
Gundry MD is also a proud sponsor of charity: water. charity: water is dedicated to building new ways to get clean drinking water to communities in need. A portion of every Gundry MD product sold is donated to charity:water.

The first part of the book is where we learn the details about the program: the background and effects of lectins in our bodies, the common disrupters we may not be aware of, as well as a detailed explanation on how we should approach the program to bring back our innate happy and healthy life.
Please, the first part of this book can either be a refresher of the main book if you have already read that, or it can be the only book to read if you haven’t read that yet. That is, don't bother and get this one instead. You will find ordered and well-explained information covering pretty much all aspects of the program proposed, including the list of desirable food choices as well as the list of those we want to avoid in order to keep low inflammation. I say that because I ended up reading the main book twice and is still fresh in order to compare them both.
The second part of the book is quite delightful. Now, as I edit this review written previously, I wanted to add that I have prepared around 10 of the dishes in the book. First one was the "Cream of Mushroom Soup", and sincerely enjoyed the result. Then tried the delicious "Brazilian Cheezy Bread" which is a yummy snack together with a cup of tea/coffee. From the main dishes I have tried a handful and cannot say which one has been my favorite so far. My family loves the "Halibut with Mushrooms" and I personally enjoy cooking the "Spinach Artichoke Lasagna".
As a side note, most recipes seem to be straightforward, and the ingredient list idem. Also, it's important to note that the recipes will please both vegans and omnivorous.
Even though I am fortunate to be in good health that let me spend time outdoors to go on adventures and move freely, I sincerely believe this lifestyle proposed by Gundry can be a healing approach to foster better health even if we don't have any health issue. At first his viewpoints can be daunting, but it makes completely sense once we understand the "whys" behind it, as well as after complying with the program for only 2–3 weeks. I felt more vibrant upon starting his approach, my skin felt healthier after 2 weeks, my digestive system seems to work even smoother, and I feel lighter. Deep inside we all can find ways to create a more positive, meaningful and healthier lifestyle, nurturing from inside out. Nutrition, after all, is one of the foundation aspects. Besides Gundry's approach, I do enjoy Mercola's "Fat for Fuel" book and Longo's "The Longevity Diet" book. After all they are complementary and based on recent health studies/research.
Lastly, one of the ultimate readings, which I have just finished and has already influenced my thoughts deeply, is a book called "No Recipe: Cooking as Spiritual Practice" from Edward Brown. Combining the Plant Paradox Program principles together with inspiring reflections from Brown can definitely influence our perceptions around nurturing our bodies and souls.
Take good care,
Haical
Four stars is due to the first time I opened up the book to peruse it, several pages fell out. The binding seems to be of inferior quality.

Directly in relation to the cookbook, it's very well put together and gives a fair summary of Dr Steven Gundry's Plant Paradox theory, without having to purchase a copy of the more detailed book on the theory (although I'm sure it would be worth it for those who want to dig deeper into Gundry's philosophy). Despite being based in the UK, almost all of the ingredients Gundry refers are easy for me to access; the recipes offer a wide range of appetisers, snacks: soups & stews, main meals, vegetables, sides and sweets - as well as sauces, excellent condiments and dressings.
For those looking to change the way they nourish their minds, (in terms of responsible bio-diversity), and their bodies from a lifelong perspective on healthy eating - as opposed to a faddish experiment - I highly recommend this book.
The book itself is not what I expected as this doctor in his interviews does not think eating certain food is a good idea and I thought that his cookery book would reflect those points of views but instead there is a what seems a random selection of recipes. Very disappointed!
The receipes are easy to follow look appetising and taste really good.
I have recommended it to a number of my friends.
I am not a vegetarian but I found this book offered a nice balance.
Written by a Cardiologist he gives an insight into diet disrupters and some foods that can do you more harm than good!
Ultimately it is a "Cook Book" which I really appreciated but there was also a lot of information in it I didnt know.
