STEVEN GUNDRY MD, F.A.C.S., F.A.C.C., is a cum laude graduate of Yale University with special honors in Human Biological and Social Evolution. After graduating Alpha Omega Alpha from the Medical College of Georgia School of Medicine, Dr. Steven Gundry completed residencies in General Surgery and Thoracic Surgery at the University of Michigan and served as a Clinical Associate at the National Institutes of Health for years. There, he invented devices that reverse the cell death seen in acute heart attacks; variations of these devices subsequently became the Gundry™ Retrograde Cardioplegia Cannula. It has become the world's most widely used device of its kind to protect the heart from damage during open-heart surgery. After completing a fellowship in congenital heart surgery at The Hospital for Sick Children, Great Ormond Street, in London, Dr. Gundry was recruited as Professor and Chairman of Cardiothoracic Surgery at Loma Linda University Medical Center. There, he and his partner, Leonard Bailey, pioneered infant and pediatric heart transplantation. Together, they have performed more such transplants than any other transplant surgeons in the world.

During his tenure at Loma Linda, Dr. Gundry pioneered the field of xenotransplantation, the study of how the genes of one species react to the transplanted heart of a foreign species. He was one of the original twenty investigators of the first FDA-approved implantable left ventricular assist device (a kind of artificial heart). Dr. Gundry is also the inventor of the Gundry Ministernomy, the widely used minimally invasive approach to aortic- or mitral-valve repair, the Gundry Lateral Tunnel, a "living" tissue that can rebuild parts of the heart in children with severe congenital heart malformations; and the Skoosh™ venous cannula, the most widely used cannula in minimally invasive heart operations.

One of the fathers of robotic surgery, and a consultant to Computer Motion (now Intuitive Surgical), Dr. Steven Gundry received early FDA approval to use robotic-assisted minimally invasive surgery for coronary artery-bypass and mitral-valve operations. He holds patents on devices for connecting blood vessels and coronary artery bypasses without sutures, as well as for repairing the mitral valve without the need for sutures or a heart-lung machine. He has served on the Board of Directors of the American Society of Artificial Internal Organs (ASIAO) and was a founding board member and treasurer of the International Society of Minimally Invasive Cardiothoracic Surgery (ISMICS). He recently completed two successive elected terms as President of the Board of Directors of the American Heart Association, Desert Division.

Dr. Gundry has been elected a Fellow of the American College of Surgeons, the American College of Cardiology, the American Surgical Association, the American Academy of Pediatrics, and the College of Chest Physicians. He is a member of numerous other surgical and medical societies. As a medical researcher, Dr. Gundry has published three hundred articles, chapters, and abstracts in peer-reviewed journals on surgical, immunology, genetics, nutrition, plant-based diets, and lipid investigations.

In 2002, Dr. Gundry met someone who would change the trajectory of his career… and life. He crossed paths with an "inoperable" patient named “Big Ed”. Using a combination of dietary changes and nutraceutical supplements — Big Ed lost weight and cleared most of his arterial blockages. An obese, chronic "diet" failure himself, Dr. Gundry adapted his Yale University thesis to design a diet for himself based on evolutionary genetic coding.

On this diet, he lost weight — to the tune of 70 pounds — and reversed his own ailments, such as migraines, pre-diabetic status, and arthritis. He stopped eating sugar, grains, peanuts and cashews, nightshades and other lectin-heavy foods. Having experienced weight loss and the results of eating a lectin-free and gluten-free diet himself, and inspired by growing research involving the NIH’s Human Microbiome Project, his commitment to better health and longevity through a better diet solidified. His work creating nutraceutical products and supplements advanced.

No longer satisfied with repairing the damage of chronic diseases, Dr. Gundry open his own practice— The International Heart and Lung Institute and Center of Restorative Medicine in Santa Barbara and Palm Springs, California. Our family is fortunate to have found Dr. Gundry who’s open mindedness & courage in recognizing that current health care guidelines are creating an epidemic of diabetes & obesity, led to these wonderful books which have helped so many including my husband & I.Our current ‘sickcare’ system is very profitable for pharmaceutical companies & pesticide makers who use massive amounts of glyphosate & antibiotics on factory farmed animals, but devastating for the vast majority of people who take a long list of prescription drugs that alleviate some of the symptoms but never address the causes of their inflammation & illnesses. Lectins are at the heart of many illnesses and gluten is just another lectin. Let’s be clear, Gundry addresses many other mistakes many of us are making, like eating too much protein. And the specifics on how animal protein can help tumors grow. Why anyone would give his important cookbooks a bad review based on printer or editors error, or their own inability to understand or follow a recipe, is beyond me. For the person who needs a photo of every single recipe, I included Sorghum and Bean Salad. For the person who wants to make a delicious & sturdy sandwich bread recipe, I, who have never baked bread in my life, assure you that I made great bread and it can be done with his cookbooks. For the person who has RA or out of range lipids, I greatly improved both by following Gundry’s guidelines. And for the people who are over sixty, like my husband & I, you have an opportunity for a much better life, with his cookbooks. Oh and most of the new items, that these delicious recipes called for, I bought at Shoprite. Exceptions were sheeps milk ricotta & Buf mozzarella from WF, and sorghum & millet grain from Amazon. Recipes from L to R -Olive oil Rosemary cake ( Xylitol from Shoprite made it sweet enough without the syrup) Sturdy Sandwich bread (made from flours from Shoprite) Instapot hard boiled eggs with Arugula & radicchio, Eden brand canned chickpeas with sorghum, Root Vegetable Lasagna with sheeps milk ricotta from WF, Walnut bread, and Tangy coconut greens with sautéed shrimp.

This book starts out (for me) with a bang. The author dives right into the subject of lectins. These are proteins in plants that are like natural pesticides and they aren't all that good for you. Cooking and soaking does get rid of some of it but if you want to know why non-grain dog foods may be toxic to some dogs (recent findings) then you can probably blame the lectins. They are found in nightshade foods (eggplant, tomatoes) and also beans and legumes. Lectins upset your gut so they may be something to avoid. The one he focuses on is Wheat Germ Agglutinin that may minic insulin in your body and help to make you fat (why bread adds to your weight so insidiously as many of you observe.)

So his point is that you need to watch out for some of the plant foods as they may not be good for your particular situation.

The book has a lot of good recipes including a very nice lamb dish and all of them use the single pot, instant or crock and that makes cooking easier for the family. Also has those single sheet-pan baked dinners that are so easy to clean up.

Some recipes are different "hearts of palm" "fish" sticks (I love hearts of palm) and salmon-asparagus fajitas, but also beef and broccoli and broccoli cheddar soup, minestrone and lettuce wraps. Lots of very good vegetable recipe that will help the family eat more veg and enjoy it. A section has basics for the instant pot such as rice, hardboiled eggs and potatoes.

Not all lectin containing foods are bad, but this book gives you good recipes, a lot of "keto" things and some ideas to consider.

Just received the new cookbook😊
Love it.
It has 4 chapters on education about Plant Paradox.
It gives ideas for getting your family on board, it addresses children’s dietary needs. It has a meal planning section and a 7 day sample meal plan.
There are so many recipes in here I have not seen & look forward to making , like a pancake cooked in a cake pan 😊 sweet potato lasagna, macadamia butter chocolate cheesecake, Keto kids fudge pops, a few sauces, Naan bread, mushroom fries etc. I’ve already made the walnut spice cake from the book and we love it.
Detailed pressure cooking facts, which is nice.
He shares recipes from other bloggers and everything has a vegetarian version if there is meat in it.
LOVE the lunch recipes, some great ideas.
Everyone has different taste buds, so in my opinion (my love of certain foods) all these recipes are great!
The pictures are wonderful in the book also.
I love it has family friendly serving sizes and ideas for children so I can prepare fun meals for my toddler grandson and future grandchildren.
Will definitely be buying more books for Christmas gifts for my adult children and baby shower gifts.🎁

Better and better! I first went through the book to see how many crazy ingredients I would need in order to make the recipes, not too bad, especially since I'm more used to a lectin free diet since the first Dr. Gundry cookbook. I have to say that the foods that I have prepared are very impressive. I especially love the "sturdy sandwich bread" which also makes the best toast! The Thai Coconut Chicken was so good we made it again the next night. There are sections that explain the plant paradox plan as well as breakfast, lunch, dinner, and delicious treats (gotta pick up some more Monk fruit sweetner, it really is good! ) I still have difficulty finding some ingredients that are probably easily found in California but this cookbook was well worth the money and I'm enjoying learning new ways to cook and eat healthy. Most recipes are Instant pot friendly which I like.

Easily understood but truthfully is it really true? I don’t know. I have been on the bio complete 3 and the mtc wellness and avoiding as many lectins as possible. Frankly, I’m constipated a lot. I never am until now. It is interesting this view point.

Our family is fortunate to have found Dr. Gundry who’s open mindedness & courage in recognizing that current health care guidelines are creating an epidemic of diabetes & obesity, led to these wonderful books which have helped so many including my husband & I.
Our current ‘sickcare’ system is very profitable for pharmaceutical companies & pesticide makers who use massive amounts of glyphosate & antibiotics on factory farmed animals, but devastating for the vast majority of people who take a long list of prescription drugs that alleviate some of the symptoms but never address the causes of their inflammation & illnesses. Lectins are at the heart of many illnesses and gluten is just another lectin. Let’s be clear, Gundry addresses many other mistakes many of us are making, like eating too much protein. And the specifics on how animal protein can help tumors grow. Why anyone would give his important cookbooks a bad review based on printer or editors error, or their own inability to understand or follow a recipe, is beyond me. For the person who needs a photo of every single recipe, I included Sorghum and Bean Salad. For the person who wants to make a delicious & sturdy sandwich bread recipe, I, who have never baked bread in my life, assure you that I made great bread and it can be done with his cookbooks. For the person who has RA or out of range lipids, I greatly improved both by following Gundry’s guidelines. And for the people who are over sixty, like my husband & I, you have an opportunity for a much better life, with his cookbooks. Oh and most of the new items, that these delicious recipes called for, I bought at Shoprite. Exceptions were sheeps milk ricotta & Buf mozzarella from WF, and sorghum & millet grain from Amazon. Recipes from L to R -Olive oil Rosemary cake ( Xylitol from Shoprite made it sweet enough without the syrup) Sturdy Sandwich bread (made from flours from Shoprite) Instapot hard boiled eggs with Arugula & radicchio, Eden brand canned chickpeas with sorghum, Root Vegetable Lasagna with sheeps milk ricotta from WF, Walnut bread, and Tangy coconut greens with sautéed shrimp.

Thank you so-so much Dr Gundry for all your hard work we definitely do need more people like you on this planet, the world would be a much better place by far to live if more people were thinking the way you do. I do hope that you will be living for very long time because the work that your doing is so important and pretty unique in this world.
