I wanted it to make toffee, which needs to reach around 305 F. The one we got worked pretty well until it got to around 250 F, slowly increasing to point to around 270 F - and then not rising above that, no matter how hot the sugar got.
The first time I tried it, I noticed that the toffee started getting really dark and the thermometer was stuck at 270. The second time, I used another (different model) thermometer for comparison. While the other thermometer had reached 310, this one was still at 270 F. The toffee was indeed around 310, as when I emptied it onto the tray it was a dark caramel color and it was the right toffee consistency. I uploaded a graph showing the real temperature vs the temperature read by this thermometer (see under customer images).
I was sad that this thermometer didn't work.
I initially calibrated the Polder THM-515 with boiling water at 212° F and the thermometer registered 6° F lower than actual temp.
Side by side readings were taken with a calibrated ThermoPro digital thermometer.
Although that might not be a large error for deep frying, that amount of difference can make or break a candy or chocolate recipe.
Additional readings were taken at higher temperatures using an oil bath.
At 273° F the thermometer registered 267° F.
At 297° F the thermometer registered 291° F.
At 338° F the thermometer registered 329° F.
The Polder thermometer kept a pretty steady error rate of -6° F from actual temperature until the last reading which was -9° F.
Lesson learned: You get what you pay for. This thermometer is cheap... and *very* inaccurate. This is a dangerous item to own, and it boggles my mind that Amazon allows it to be sold like this. It's downright reckless. These things are going to burn down someone's house someday. Mine is going in the trash.
I originally purchased it to use with soapmaking. I have since used it for other various cooking tasks. Most recently, it gets heavily used for heating up goat's milk to 180*-185* to make cheese and yogurt.
This heats well, seems accurate, it is easy to clean, and I have not really noticed any wear over the last year. No fading in the plastic, no weak spots, no rubbing off of numbers. It pretty much looks as good now as it did the day that I purchased it.
The metal has a medium weight feel to it, the handle is plastic. The clip is sturdy. It is about 11.75" long and about 2" wide.
No cons to speak of with this thermometer. It works well for what I purchased it for and then some.
