I did not adequately "condition" the skillet.. It gave the food a terrible flavor and odor... Then I cranked the heat up to high for several hours.. the coating smoked and finally cleared up... Now I am very pleased with the skillet.. temp control is VERY good... pretty uniform heat distribution.. it simmers wonderfully for long, slow cooks.. It browns food well on lower heat setting... I like the lid does NOT have a vent... Sort of pressure cooks the food with the lid on for tenderizing meats... I would buy this skillet again... even with the coating I did not want..

The only problem with sticking is most bacon today is cured with sugar. The bacon doesn't stick but the sugar forms a fond which tends to stick. The plastic and wood spatulas used for Teflon will not easily remove it. However, an old fashioned metal spatula easily removes it.
For cleaning I treat it much like an old cast iron pan. Dump the grease and wipe it out with a paper towel. This keeps it seasoned. After fixing gravy or something messy I just add water to the warm pan and let it soak. Then scrub it with a sponge and everything is easily rinsed away.
I make sure the temperature controller is turned to off before plugging it into or out of the wall. I also insert a folded paper towel between the handle and the pan to protect the controller from grease spatters. In the past grease has ruined several controllers.
