How I wish I could also share the ODOR this product reeked of. When I opened the package, the first thing I noticed was how plump and light-ish brown the beans were. It was not normal.
Then as soon as I opened the vacuum sealed pouch, instead of smelling vanilla, I was hit by an odor I would associate with the DENTIST or medical clinic. The beans were soaked in some compound that made them look fatter and more importantly, it made them heavier. In fact, these beans were not plump, they were bloated.
This poses a huge concern for me because due to this seller's greed and carelessness, I HAVE NO IDEA WHAT CHEMICAL OR PRESERVATIVE they've used and it may cause unaware buyers a lot of HARM. I asked my husband to smell the beans and he frowned and asked me if it was soaked in formaldehyde. I am almost tempted to take them to a laboratory to find out what exactly were used. But for now, I ask that you refrain from buying these.
I also doubt that reviews are legitimate. Reviews can be bought. However for me, money is inferior to doing the right thing. I don't care if people vote down my truthful review as long as I could prevent others from getting ripped off or worse, get sick.
The fragrance is overpowering, and the shipment comes with a nice recipe for creme brulee. Don't throw away your used vanilla pods! Save them to flavor your sugar.
I am still just as pleased with these beans as I was when I first got them. After 3 months of maturation, my homemade vanilla extract is excellent! Dark brown and slightly "syrupy" and it will only get better with age. Total price of the beans used in the extract (22 whole beans, split ~$10.00) and the alcohol (smirnoff vodka750 ml. ~$9.00) just under $20.00 produced an entire quart/32 ouces of fantastic extract and seeing as the "pure" vanilla extract in my grocery is about $6.00 per 2 oz. bottle the savings is tremendous. I would still be saving a fair amount if I purchased vanilla in bulk (like at Costco.) It is simply a win-win.
When I went to use them I saw the tips of many of the beans on one end had a white substance and I wasn't sure why. I know it's not "frost" or vanillin crystals because I know what that looks like. I don't know if they were like that upon arrival or if it happened while being stored.
So I used a few, discarding the tips, and the beans had great fragrance and flavor. I put the remainder of the beans back in a sealed bag but within days of opening the package the white was half an inch up the entire cluster of beans. I had to throw them all away.
I use a lot of vanilla, so I've purchased vanilla beans from stores many times and they have a great shelf life; I've never purchased beans that molded, even upon storing them for much longer periods than this. Fresh beans should last in the original vacuum sealed packaging for a good 6 months when kept cool and dry.
I've checked with other chefs and searched around -- this seems to happen when the beans are packaged with a large amount of water still in the bean which is most common when the beans are sold by weight instead of piece. Some speculate this may be due to attempts to sell something at a "1/2" pound weight with much of the weight derived from water. It would explain the very low price.
I did not rate this a 1 star because as a buyer I assume responsibility as well for not properly inspecting upon arrival or contacting the company immediately upon an issue. Also I did not practice good common sense with "too good to be true" pricing. I guess I got what I paid for.
Buyer beware. Inspect immediately upon arrival and plan to use right away.
