The key to real Sichuan cooking

I had a Cook's Illustrated recipe for kung pao chicken that required Sichuan peppercorns, and insisted on no substitutions. My nearby pan-Asian grocery didn't stock them, so I ordered these, and coarsely ground them in an old coffee grinder. Wow! It was a whole different level of kung pao chicken, nothing like I've ever had at a Chinese restaurant in the U.S. (And nothing like I've had in China, because I've only been to the east coast.) Not hotter, but much more intensely flavored, with a real sense of tingle on the tongue. This will overwhelm delicate palates, but those who like very flavorful food will love these.

Weak Flavor

I was very excited to receive this product based on the reviews as I had been craving mapo tofu for weeks now. When I opened the bag I wasn't met by an explosion of pungency as I was expecting, but I thought it was because the peppercorns needed roasting. I roasted 3 grounded tablespoons of this pepper with hot oil along with garlic and fresh grated ginger for about 30 seconds as I'd seen my mother do a million times. Then I added minced meat and finally silken tofu. This is for about 1 quart of mapo tofu. I would have thought 3 Tablespoons would be enough. I didn't smell enough of the pepper fragrance as I was making the dish and was starting to adjust my expectations downward for the final product. When I had my first bite of the mapo tofu there was a weak attempt by the pepper to make an appearance...and then it went away as anticlimatically as it came. I strongly believe that if I were in China better peppercorns could be had for a fraction of the price, but I'm not in China so I have to settle for this.

Totally my fault for not reading the description but I thought I was getting some hot pepper corns, these are nothing like that. There is really no heat, just sort of a lemony/lime/citrus-ish type of flavor with an odd tongue numbing sensation. That doesn't really describe it accurately but it's the best I can come up with. I'm still figuring out how to use this flavor profile, I think I used too much in my first dish, I'll have to keep experimenting and look up some recipes.

I am looking for a small bag of Szechuan peppercorn, is nicely pack in resealable sealed bag but I find the peppercorn not as fresh and lack on aroma of typical Szechuan peppercorn, also not as tingling spicy as expected. If you like mild Szechuan peppercorn taste this might be perfect for you.

Having only ever read about these and never directly experiencing them I had to learn the hard way: Be very sparing with these. It is not the heat--there really isn't any. They tingle and they have a floral flavor that can go from being in the background to overwhelming in about a teaspoon or so over whatever the proper amount should be. So when you first get these use a small amount, crush them first and taste as you go. Otherwise you will suddenly find yourselve overwhelmed like I did.

These are fine if you cannot buy/find them from a grocer or specialty market. They don’t have the same mouth tingle and warmth as Sichuan peppercorns I’ve tried before. I recommend doubling the amount you would normally use to make up for the lack of flavor. Overall I think they are a decent value for the price, but I think they could use more punch and flavor.
