This also works great with sweet potatoes.
I'm trying to cut back on my oil consumption, and you can bake your fries at 420 for 15 minutes, stir them up, and then bake for another 15-20 minutes. Just be sure to use parchment paper (not aluminum foil), and they won't stick and will come up nice and crispy.
This is one of those kitchen devices that I wish I had bought years ago!
The plastic used is sturdy. It doesn't feel flimsy at all. But there are other options out there (for more than twice the price) if you want a restaurant-quality, all-steel slicer. This works great for home use, cleans up easily, and cuts perfectly uniform fries each time.
That proved to be a big mistake. It broke the first day and, even when it became functional, it was a major pain to use. Big, bulky and didn't cut all that well to boot. It was returned.
But, I still wanted to be able to cut fries. I don't do massive quantities at a time. My usual batch is about 2 to 3 pounds. So I figured I've give the Progressive a try.
So happy I did. This works wonderfully on white potatoes. You need to get the technique down - cut a small amount from the end that presses against the cutters so you can maximize the cutting force. Cut the huge potatoes down in size a bit, and push the lever with a quick, continuous motion.
It has worked perfectly for me. Plus, the suction base holds the unit much more secure than the suction feet on the commercial-style unit.
Granted, if you're looking to cut 10 or 15 pounds at a time you'll exceed the abilities of this little guy. But for smaller batches this will do the job well.
I looked at the all-stainless version of this cutter, and decided the plastic version would be a better value. Costs less, plus I assume at the price charged for the deluxe version, the stainless is not primo quality and would eventually rust. No worries about that with the plastic one.
I don't expect this will be a tool that will last so long that I can hand it down generation-to-generation, but for the price it's well worth having in the kitchen. Easy to use, saves time, and produces great fries. Highly recommend with one caution: you have to use it right to get the best results.
