Waste not, want not. When it concerns fresh fruits and vegetables, Oregonian Marshall has the right idea: use every part of the ingredient possible to enhance and expand flavors exponentially. Peach stones appear in the eponymous peach-stone tonic. Pear peels and cores in lavender pear-peel pectin. And kumquat peels are also deposited in her liquid-gold vegetable stock. That’s one of the differentiating features of this canning and preserving collection. Her initial water-bath canning lesson is explained in simple steps, accompanied by charming color-washed illustrations. The chopping chart and elevation chart get similar treatment. The 100-plus recipes truly bespeak the Northwest: carrot cumin slaw, haluski with blackened brussels sprouts, radicchio and arugula salad with strawberries, and drunken apple crumble. About the Author

Sarah Marshall is the creator of Marshall’s Haute Sauce. Her sustainable, farm-to-table approach has led her to develop recipes for The Walrus and The Carpenter, Jacobsen Salt Co., Bee Local Honey, Portland Creamery, and Union Wine Company. She has been interviewed for Sunset, The Wall Street Journal, The Boston Magazine, and O, The Oprah Magazine and her recipes have been feature in The Oregonian and Taproot magazine. She teaches cooking and canning classes and is a member of the Portland Preservation Society and Le’ Dames PDX. She lives in Portland, Oregon.

Great recipes and philosophy
I am a long time food preserver and I found this book late in the season this year as i wanted some new inspiration for next. It caught my attention for its emphasis on using the whole plant. That is something I want to do more of and bought this with that in mind. I am inspired and looking forward to using this book more next season as I find the recipes inventive and appealing. I have only made the green tomato enchilada sauce so far and already have enjoyed several jars of it and worried I didn't make enough for this year. It's really delicious, so I am looking forward to making more of these creative and interesting new twists on old favorites, with plenty of new to me recipes to keep me interested.

My canning repertoire has needed some pizazz for awhile and this book does not disappoint! My favorite part is the section dedicated to green tomatoes. Non-canners need not shy away as there are many recipes that don't involve canning or additional kitchen equipment. I think this book is a must have for anyone with a garden, CSA subscription or is a frequenter of farmers markets.

I love this book. I have bought 3 copies total, one for myself and 2 for family. Preservation Pantry has been my go to book for any recent birthday. So inspiring and thoughtful wrote. Anyone can pick up this book and can with confidence!

Love this book- covers the basics but also really creative recipe including recipes to use the products you’ve preserved. Love the root to core concept too. This is a must have for anyone who loves to can. Beautifully illustrated- a work of art!

It did have recipes, so it's not like false advertising, just not a lot of useful ones. Honestly I paid 99¢ and I feel like I overpaid. On a positive note if you're a boozer there may be some recipes that interest you.

I am so in love with the simple, step by step manner of this book. The drawings are so sweet. I highly recommend this for the beginning preserver anywhere - this book teaches the "basics" very well.

Beautiful book with great recipes and no need of obscure ingredients which won't get used later.
