The popularity of the pressure cooker comes and goes with other trends. Fortunately, they are trendy again. With improvements over the last decade or so in safety, that trend is well justified. In addition, the pressure cooker helps you turn affordable ingredients into amazing dishes.

"The Pressure Cookbook" makes a great maiden voyage guide for those who want to learn how to use this specialized cooking vessel. The instructions are well-written and easy to follow. On the other hand, the flavors produced in the recipes are not overly simplified. Someone new to using a pressure cooker won't feel like you've sent your taste buds back to kindergarten.

The specific combination of manageable techniques and sophisticated flavors really boosts the value of this lovely little book. The images are inspiring and helpful for the completed dish. I did, however, wish my version of the "Braised Chicken in Lemon-Basil Sauce" got the gorgeous color in the photo. I'm still working on matching that color. Of course the flavor was so great no one who tested the first batch found it lacking in any way. With the lemon slices cooked down tender while retaining the enlightened lemon flavor, any leftover lemon bits were fished out and devoured.

Another favorite was the "Moroccan-Style Tomato-Rice Soup." The dish would be a fabulous, fast (only 9 minutes of cooking time) meal when fresh tomatoes reach over abundance. Keep the kitchen cool with this short-order dinner. The earthy spices play against naturally acidic tomatoes. The combination resulting clears your palate and inspires just one more bite, then another and another. My husband wished for some lamb to accompany the soup--and we still finished all about ½ cup of the recipe!

I bought this from Williams-Sonoma, but i believe it to be the same version.

My husband and I have been using this cook book for approximately a year with our electric pressure cooker and have loved every dish. In fact, this is our go-to cookbook/dinner planner during the winter months.

We have made beef stroganoff, bolognese sauce, pot roast (one of our faves), spanish pork chops, ginger glazed chicken, risotto, potatoes, Texas style chili, basil lemon chicken, Beer braised chicken thighs and many others. The pot roast is delectable and the Risotto is just so easy we've made it at least half a dozen times.

We actually take a look in this book as if it was a menu when deciding what to do for dinner and then shop for the recipe. The general information about pressure cookers in the beginning pages was also helpful.

This was the first pressure cooker cook book we had and still the one we use, though i've purchased others on Amazon. The other books were good when i made a cheesecake as this book does not contain info about desserts. Using the pressure cooker for desserts is a bonus for us - not the primary function so we don't consider that a draw back.

We are so happy with the results that we are excited when selecting an untried recipe because of how consistent the results are.

highly recommend it!

P.S. - the kids love this food too! (age 7 & 9)

I just read through the entire book; the recipes are so so. This book is not written for an electric pressure cooker,it is written for a manual one. Although it does include a few comments about electric models. I have an electric one. I also would like more one pot meals, not having to take them out, put them in a casserole pan and put it in the oven type meals.

I think this book has some terrific "simple" recipes that are classics, easy to prepare for the whole family, and reliable, I haven't tried everything yet, but there are some recipes new to me that look wonderful. I especially like that at the top of each page is a guide to how long the recipe cooks for along with the type of pressure release. Makes it easy to find at a quick glance. Also, I like the cooking chart and guidelines.

I have used a pressure cooker for many years and was looking for new receipes but not fancy ones. This is too modern for me all I wanted was good roast or chicken with potatoes and vegetables. New desserts. Would not buy again.

It was for a gift and I'm a little disappointed. The pictures are nice but It doesn't have very many recipes. I was looking for a more basic type book. This seems to be kind of fancy and limited.

I love this book, but think there is a mistake on page 75, spanish style pork chops with vinegar.......it said 2 minutes under pressure, and that does not seem like it is enough time......I make the Parmesan risotto all the time and the timing is right on......I won the electric pressure cooker, so I just set the time and brown in the pot.......If anyone can check that recipe........or made it let me know...
