Joey Allaham, a fourth-generation butcher from Syria, brought his meat expertise to the United States in the early nineties and began a journey to change the public perception of kosher dining. He founded a wholesale meat business and recognized the need for a kosher steakhouse. A resourceful businessman with no formal training but very clear ideas, Allaham made his dream a reality and continues to forge ahead in the highly competitive hospitality industry. His well-trained palate and his search for the best meats combined with his passion for excellent service have made him a force to be reckoned with in New York's competitive fine dining scene.

Chef David Kolotkin's first cooking experience was making ice cream in his garage at twelve years old. From this auspicious start, nurtured by the matriarchs of his family and his mentors, Adriano Bokinac and Michael Lomonaco, Kolotkin began his lifelong journey as a culinary innovator. He went on to attend the Culinary Institute of America, graduating with the Most Likely to Succeed award. He apprenticed at the world famous 21 Club under the tutelage of Chef Lomonaco and went on to work many notable restaurants, including Aretsky's Patroon, Butterfield 81, and Windows on the World, before finding a home at the Prime Grill. This is by far the best cookbook I have ever owned! The restaurants where these recipes come from are outstanding and to be able to recreate them in my home is so wonderful! I recommend this to everyone. I recommended it to my butcher and even bought another copy to give to my son for Chanukah, which this year starts Nov. 27th and coincides with Thanksgiving.
This is a 5 star+ cookbook!!!!

I love all the Prime restaurants and this cookbook is the best thing ever!! I have tried a few recipes and they are all the real deal. They come out EXACTLY as the ones served to me at their restaurants. There's also a lot of interesting background information and biographies. A must have for anyone who enjoys any of the Prime family of restaurants.

I found the cookbook to be just average. The recipes included are for foods most people aren't interested in making. There a few that will interest some fans of the Prime Grill, but most recipes won't. In addition, the recipes are too simple! Not simple in the preparation and time needed for the recipes, but for the ingredients used. What makes the Prime Grill stand apart is their dry aged quality meat. If you aren't going to use the same quality meat, fish, etc then this cookbook is meaningless to you.
