Put More Pumpkin in Your Year
Pack your diet with extra nutritional punch! Versatile, delicious pumpkin -- a powerhouse of complex carbohydrates, protein, vitamin C, and huge amounts of vitamin A -- is landing on many nutrionists' lists of "super foods." Shouldn't it be landing more frequently on your dinner plate?
Take advantage of pumpkin's health benefits all year by adding its mellow flavor and smooth texture to an exciting variety of global tastes and classic baked goods. Use canned puree in spicy Thai Pumpkin Soup; toss a handful of toasted seeds into a hearty Winter Salad with Maple Pumpkin Dressing; or savor the mellow taste of fresh pumpkin in Moroccan Chicken & Pumpkin Stew. Of course the rich spciy flavor of pumpkin pie filling never fails to delight. It's well represented here with six fresh takes on pumpkin pie, along with pumpkin cheesecake, almond pumpkin bread pudding, pumpkin panna cotta, and pumpkin ginger ice cream.
So, use it fresh or canned -- there's always a place for pumpkin!

In this book, DeeDee Stovel has developed many pumpkin recipes including soups such as Caribbean Black Bean. She shares how to roast or grill pumpkin, then add it to salads. Or you can make side dishes by mashing and mixing in herbs and other fruits. Recipes for pumpkin fruit smoothies and even a pumpkin drink are included. On the top of my list of her pumpkin dishes to try is Roasted Ginger pumpkin soup.
This cookbook would be such a big help to young mothers who were never taught cookery and only know how to order a pizza. The recipes are not only simple to follow, suprisingly delicious, and appealing even to young children, but the dishes will save you loads of money in your monthly food bill while promoting your personal health.
I am a pumpkin-cooking fool now!
So yummy, so good for you and it makes you smile. I've even been inspired to use pumpkin in some of my old favorite recipes. The fam loves it and my coworkers are begging me for the recipes. Well, they're getting copies of this book for christmas :)
I've made lots of recipes from this book and there was only one slight disappointment; the Mexican Pumpkin Lasagne. It was basically delicious but kind of dry; I felt it could have used more sauce.
Another reviewer mentioned the Pumpkin Molasses Gingersnaps and how delicious they were. I second that. However, other than one other recipe, I haven't made many of the sweet recipes from this book, mostly because I'm so very interested in exploring pumpkin's usage in savory main dishes, side dishes, appetizers, etc. and I have tried and true pumpkin dessert recipes that I have gotten elsewhere. However I do love pumpkin sweets and wouldn't mind trying the sweet things from this book anyway...
My favorite dish from this book by far is the Pumpkin Gratin with Caramelized Onions. Oh my! The nutty, creamy Gruyere cheese, the caramelized onions flavored with smoky bacon and thyme, the mellow pumpkin as a base, touched with the nutmeg scented cream, topped with crispy breadcrumbs and browned cheese. Heaven on earth. I'm salivating just thinking of it! Every autumn my friends and I hold a Great Pumpkin Feast; a pot luck that is everything pumpkin, and this dish is always the big hit. I have friends who can't wait for the feast just so they can have the gratin!Read more ›
The fact that this book also includes a miriad of other recipes, not normally found in the UK, has proved a treasure and it looks as if we shall continue to grow a regular crop of these wonderful vegetables for many years to come
