The first time I used the mat, I baked one of our families favorite foods which we've enjoyed for several years,
Panko breaded chicken, which turned out all over golden brown, more tender & moist then ever before, without turning.
Our favorite store bought (frozen) egg rolls have never turned out as evenly baked & moist or tasted this good.
The mat works as advertised ~ air circulates under food so it cooks evenly and crisp,
and fat drips off the food which makes it much healthier.
Food bakes perfectly without burning ~ sticking or drying out.
And because food is left more moist, reheated leftovers are also more moist and tender.
This is also great for heating leftovers in the microwave, the food is just like fresh baked.
especially if it's a small amount that the mat can be pulled over the top of the food also.
Some foods my need to be baked a few degrees higher (25 to 50) then the recipe calls for, &/or a few minutes longer.
The page of information that comes with the mat includes 15 really good recipes that bake well on this mat.
So far, we've tried 5 of them and thought the recipe was especially good.
The product description on Amazon says up to 480 degrees.
But the information that comes with the mat says ~ "Do not exceed 450 degrees in a conventional oven"
Hand wash & shake dry.
11 1/2" x 16 1/4" ~ but easily be cut to size.
Easy to store in a drawer ~ when rolled up it's 3" dia
Update - Aug 8, 2014. Still impressed with how food bakes - perfectly.
But - the mat is very hard/impossible get clean each time by hand.
Cleaned off what could - and kept using the mat. Food is still great.
However - burned on build-up got to a point of wanting the mat cleaned well.
Tried many cleaners, nothing gets the black, burned-on crud off.
Our daughter ran it through her dishwasher - pressure washing - 3 times.
Soaking between times in soda and hot water - scrubbed with a scrub brush -
and tried several other cleaners - and cleaning ideas
which resulted in most of the crud off but some black burned on grease still remained.
The mat is permanently brown/black on both sides.
The mat color - nor the black squares burned on the surface of the pan
it's been repeatedly used in - which can't be cleaned off, doesn't bother me.
But wanted to mention how hard it is to clean the mat.
And it's potential to ruin the looks of an expensive pan.
Granted we've used this mat a lot.

We've had foil under the mat soon after the first photos (Aug 2014)
The foil may slow down the speed of darkening, but I don't feel it'll stop it.
To be fair = this mat has been used a ton.
