I found out about Shaohsing rice cooking wine from this great cooking blog, TheWoksofLife.com. Thank goodness I finally decided to purchase this! The price was much better here than other online retailers. Anyway, I used Shaohsing rice cooking wine for the first time today. It's incredible how one thing can turn a dish from being just good to being great! I made a garlicky vegetable stir fry and it tasted so so much better today than previous times I prepared it. As far as taste, it's slightly savory in taste. What it does basically is provide that "wok hay" flavor crucial to many Chinese dishes per the creators of the Woks of Life blog.

I highly recommend this! 😋

The reason for the low review is due to receiving a different brand that what I paid for. I clicked on Qian Hu Chinese Shaoshing Rice Cooking wine (red) and what I received was You Yee Brand Cinese Shao Shing cooking wine. Completely not what I ordered. I choose a brand specifically for the type of food I want to create with the product and do not want something that I have never used before. Flavors are complex and react differently in each environment they find themselves. Qian Hu is a tried and true brand for making delicious Korean BBQ wings for which people rave when they eat them. Qian Hu Chinese Shaoshing Cooking wine is a part of that which I now do not have. The seller is getting the bad review for false and improper labeling. The jury is still out on if the wings, and any other application for that matter, will be acceptable instead of the requested variety.

I cooked fried rice for several years before discovering there's more to it than rice, soy sauce, scrambled eggs, & meat. Shaohsing rice cooking wine is one of those "secret ingredients" that can add traditional & authentic flavor to transform a dish to restaurant quality. I've used it in fried rice, marinades, stir fry sauces, etc. A little goes a long way. I've read that in a pinch you can substitute pale dry sherry, dry white wine, mirin, sake, small amount of apple cider vinegar, or a reduced amount of cooking sherry. But of course, each substitute will produce an inauthentic flavor. I chose tradition & authenticity. I chose Qian Hu for quality, quantity, price, and the favorable reviews.

With Covid-19 came the shut down of my favorite Chinese restaurants plus I live rural. Nobody delivers here and it's not always convenient to drive out for takeout. We do sometimes, but prior to Covid-19,
you could go hit the buffet at the Golden Dragon or the Peking Wok once or twice a month and have hot delicious food. So like a lot of people, I started searching online for "copy cat" recipes of our favorite dishes. I always wonder why even something as simple as a fried chicken wing takes on a special flavor. I thought it was just soy sauce in the marinade. Nope. It's Shaohsing wine. This Mother's day, I replicated all of my mother's favorite dishes from the buffet, including wanton soup, fried wings and a General Tso inspired dish made with shrimp instead of chicken. Those wings marinated in a mixture overnight that contained two tablespoons of the Shaohsing wine. The wonton filling and stir fry veggies also contained a splash (along with other flavors like toasted sesame oil, miso paste, etc.) The results were outstanding. The wings, especially, were banging!! I thought I was going to have leftovers but nope! Everyone ate ample servings and wanted "to go" boxes. I have hosted a lot of dinner parties. People consider me a good cook but I don't think I've ever gotten so many compliments in one night. I would definitely want to always have this in my pantry and looking forward to trying new recipes.

This stuff is amazing, it gave my recipe the flavor it lacked, everyone enjoyed the meal and were disappointed that there were no leftovers.
