Asafetida (sometimes spelled Asafoetida)...A Little History! Native to Southwestern Asia. A little known spice outside of India, asafetida is the dried resin obtained from the rhizome of the giant fennel plant. Powdered asafetida has a strong odor, reminiscent of picked garlic. In most Indian cooking it is used as a flavor enhancer and once cooked releases an onion-like flavor. It is also known as devil's dung, asant, food of the gods, jowani badian, stinking gum, hing, hengu, ingu, kayam, and ting.
Asafetida is used as a digestive aid, in food as a condiment, and in pickling. It typically works as a flavour enhancer and, used along with turmeric, is a standard component of Indian cuisine, particularly in lentil curries such as dal, sambar as well as in numerous vegetable dishes. It is sometimes used to harmonize sweet, sour, salty, and spicy components in food. Asafoetida is considered a digestive in that it reduces flatulence.

Asafetida has the strongest aroma of any spice... so much so it requires a binding agent just to make it usable! The strong smell is normal - in fact, it represents how fresh/potent it is.

RECIPE: Lentil curry
Cook time: 45 minutes Prep time: 30 minutes
Serving size: 4 Heat level: Mild
2 cups Rani Toor dal
1 tsp. Rani Turmeric ground
1 tsp. Rani Cumin seeds
1 tsp. Rani Asafetida ground
salt to taste
Method: Soak Toor dal for 30 min. and drain. Cook the toor dal in 3 ½ cups of hot water until soft. Add the turmeric, cumin seed, asafetida, and salt. Simmer for 5 min.

It also has a fascinating history; In Roman times the giant fennel plant (known as Silphium or Laser) was so valued for culinary and medicinal uses that it was harvested to extinction - Asafoetida, a close cousin, was considered a worthy alternative and has remained in use for thousands of years since. Egyptians and Minoans both had specific glyphs to represent this unique fennel resin. Apparently animals that grazed on the original giant fennel had extra delicious meat, and this may be the reason the original went extinct (no one ever figured out how to mass cultivate the plant).
The most fascinating aspect of this story is that the original giant fennel had heart shaped seeds. They were so famous and valued that the first heart symbols (representing the seeds) in human history were put onto coins, as Silphium resin was worth its weight in gold. Its connection to love is that Silphium prevented pregnancy - like many plants in the fennel family, it was pharmacologically active and prevented pregnancy very successfully. It was the first birth control. And from that legacy here you have Rani "Asafetida" which is a weird spelling of the Roman word "Asafoetida", coming from Parthian (Persia / modern Iran) trader's word for resin "Aza" and latin "foetidus" meaning stinky.

I read about this book in the NYT and ordered it. Dr. Aviv recommends asafetida to replace garlic and onions for seasoning. I am finding it very satisfying without causing symptoms. Garlic and onions also are banned on the Low FODMAP diet, so this would also be good for people with IBS.
Incidentally, all of my symptoms have improved dramatically since starting the diet a couple of weeks ago. The book, too, is available on Amazon.
Rest assured, this is the real stuff, and it's effective. I'll be buying more of this, since I can't find it in my local markets.
As for the other reviews complaining about the odor:
A) This is what Hing smells like. It's not unusual at all.
B) To me, Hing smells like garlic/onions, so I guess the reviewers also don't cook with those items
C) If you're buying the Hing primarily so beans are easier to eat and digest, this smells much better than the alternative.
D) The odor goes away when you cook.
E) Try something new!
I use it instead of garlic and onions. It has the same pungent taste, of Salty , Spicy, Sweet, Sour, and finally pungent.
It does not seem to leave the smell, of onions or garlic (sulfur “rotten egg smell”) the folowing days. If one sweats, etc. It has many medicinal properties, im aware obviously aniins and garlic have many as well. For anyone with stomach ailments, it is very settling.
I make a sprouted garbanzo(they grow a tiny tail) packed full of enzymes, that ones body is aided in breaking down food. Not “robbing enzymes” that must break down cooked food. Its most nutrient rich, and I follow non violence, consuming fruits, herbs, some sprouted grains,after 35 years studying all western, eastern holistic medicine. Also, if Christian, I eat similar to Genesis 1:27-30, and all religions, seem to agree on breaking fast with fruit. As vegan told “you kill vegetables”!!!
I prune leaves of sweet potato plants, i eat what grows toward sun. Its been evolving process since 7 years old, when my grabdfatger worked at a slaughter house/butcher shop.
There was no mental disconnection from the animal, to packed product.
This “Hing” (common term) is more expensive than in east indian shops. Ive bought Hing from vedic Hindu shops, that do not use garlic/onions for years.
This is closest to taste I know. Id give more stars if price was not double that in organic vegan markets. Id like to know ratio of hing to other ingredients.
A top that lets one shake on, not open top, would help friends who love this hing, from overdoing, pouring not sprinkling, after loving it over root garlic, onions.

Update: I'm not going to change my rating, because that's how I felt at the time, however, I paid $3.99 for this on 16 March, 2020, including Free shipping. The current price leaves me disgusted. They are still selling it on their own site at $4.99. I will remember this after the crisis and source my spices elsewhere.
