1. Turn down the top edge of a brown paper bag and place it in the bucket.
2. Break up some peat moss and put about 3"or 4" in the bottom of the brown paper bag.
3. Place the seat/cover on the bucket.
4. Use whenever Nature calls.
5. Cover each deposit with peat moss.
6. When the brown paper bag gets about half full, fold down the top, remove it, and bury or compost it.
7. Rinse the bucket with vinegar.
8. Repeat starting at Step 1.
By using peat moss, I have never had an excess of moisture to contend with, nor have I ever had a problem with odor. If you get a seven gallon bucket for greater height, you can even use this as a bedside commode and it will be much more pleasant than the usual type of bedside commode.
UPDATE: Just came back from a 3 day camping trip and used this the entire time. It was incredibly handy. I went overkill and used a triple layer of trash bags inside of it, to prevent any leaks, and the lid still fit on very snug even with the three layers of trash bags. The black plastic gets warm in direct sun, almost hot, but not uncomfortably so. The lid accumulated moisture/dew overnight, but the seat itself was never wet, and even in below 40 degree temp, was never uncomfortably cold. At the end of the trip, we simply closed up the trash bags and left them in the closed bucket until we could get home. Very easy. On previous trips, I'd avoid drinking water to limit inconvenient trips out into the woods, but knowing I had this allowed me to drink all the extra water I needed at higher altitudes. I highly recommend the portable toilet chemicals that solidify/gel liquids. They help deodorize. We didn't smell a thing the entire time, even when packing up the refuse at the end of the trip.
