Arborio rice from RiceSelect captures the spirit of Northern Italy. An Arborio-style premium rice, Arborio rice is a bold grain that has a characteristic white dot at the center of the grain. Primarily used in risotto and rice pudding, this rice develops a creamy texture around a slightly chewy center and has an exceptional ability to absorb flavors.

Sauté onion in oil and butter for 3 minutes. Add rice, stirring for 2 minutes.
Stir in 1 cup of broth. Continue cooking and stirring until liquid is absorbed.
Gradually stir in remaining broth 1 cup at a time, cooking and stirring until liquid is absorbed before adding the next cup. Yields approximately 3 cups of cooked rice.
-Heat olive oil and butter in large saucepan.

-Add bell pepper and mushrooms; cook for 2 minutes. Add the rice and stir for 1-2 minutes.
-Add 1½ cups broth and bring to a boil. Reduce heat to medium, stirring occasionally until liquid is absorbed.
-Add remaining broth 1 cup at a time, cooking and stirring until liquid is absorbed each time.
-Remove from heat and stir in parsley.

Cooking Risotto: 1 Cup Uncooked Rice; 2 Tablespoons Olive Oil; 2 Tablespoons Butter or Margarine; 1/2 Cup Chopped Onion; 3 Cups Chicken or Vegetable Broth; Salt and Pepper (optional). 1. Saute onion in oil and butter for 3 min. 2. Add rice, stirring for about 2 min. 3. Stir in 1 cup of broth. Continue cooking and stirring until liquid is absorbed. 4. Gradually stir in remaining broth 1 cup at a time, cooking and stirring until liquid is absorbed before adding the next cup. Microwave Instructions: Combine 1 cup rice, 2 tablespoons of butter or oil and 3 cups warm broth in a microwave safe round casserole. Cover; microwave on High about 18-20 minutes. Stir 2 or 3 times. Remove from microwave, stir. Let stand covered 5 minutes.
