Seed spices and chillies are traditionally deemed essential for making dishes like spicy curries and other strongly flavoured food, but Jo has managed to create recipes in her book that satisfy the AIP criteria and still taste fantastic, without the gut-irritating aftereffects! The book is not just limited to curries (like Red Thai Vegetable Curry!) but also covers appetizers (like chips and bhajis), soups (there's Chinese beef noodle soup!), stews (Lamb and saffron stew), naan bread (really!), vegetable sides (Parsnip Saag Aloo, anyone?), drinks (mint mojito, chai), sweet treats (chai lollies, tea cake, carrot cake pancakes), sauces (bacon jam, Argentine chimichurri salsa) and finishing salts (like porcini and thyme salt).
The recipes are diverse and certainly not boring. They are also easy to follow and I like how she provides both metric and imperial measurements. Ingredients are not too exotic or hard to find in Western countries like the US especially if one is living in or near a city, probably the hardest to find would be lemongrass or saffron though these can be easily ordered online. Do take note that the naan bread and some other recipes require plantains though.
Photos are simple and to the point, providing a helpful visual to the recipes in the book. At the end of the book, Jo provides helpful suggestions for recipes categorised according to cuisines and dietary requirements such as vegetarian, low FODMAP, or coconut-free. This really helps round up the book, making it accessible to more people.
Outstanding book from an outstanding and very talented recipe author!
But not only cooking instructions - it also gives some interesting education on the food substitutes used. Not just a recipe or cookbook but highly educational too! I can highly recommend this book for someone who wants some tasty and nutritious food while maintaining their health state too!
