I like to do things incrementally, so this year I decided I was going to focus only on ground meat and not mess with sausage or anything particularly fancy. I was also a bit wasteful, as I ignored everything except the hind quarters (sorry deer!). I had three deer to deal with, and my wife won't have anything to do with it, so it is what it is.
Definitely make sure you're heavily chilling the meat. I used 1 part beef brisket to 3 parts deer, cut the meat into 1x1" strips as long as possible and got everything in the freezer. In the future I'll make sure to split the meat up into smaller pans, as when you're going through a large pan the meat on the bottom tends to warm up by the time you get there. When I ground a pan, I stuck it back in the freezer, ground it again on the second lap, and then got it into vacuum bags.
It's a tedious job, and I was thankful that this machine had enough power to keep up. It went through the meat pretty much as fast as I could get it loaded up.
Cleaning was surprisingly easy. Pesto is more messy than this thing. I did hand clean them, as the dishwasher can damage the finish.
As per the instructions, make sure to marry your blade with a grinding plate. They get worn in together.
I've only used it so far for the three deer, so I can't speak to longevity, but I have no indication that it will be an issue.
I finally had a chance to use the tomato attachment. I had all sorts of trouble using this for tomato separation. Here's some info:
1. As the season goes by, I freeze tomatoes as they ripen. I don't have the luxury of a massive all at once harvest, so this is the best option. Prior to processing, I thaw them in buckets overnight. This batch I did 90lbs of assorted varieties.
2. I had multiple issues with clogging and with metal/lube getting into the mix. It was OVER AND OVER with the unclogging. Some of the issue may have to due with the excessive liquid -- since I was using thawed tomatoes, there was extra liquid. I didn't think to try it at the time, but next year I'm going to try pre-straining the tomatoes to get as much liquid out as possible.
I have no clue where the black metal/lube was coming from. I checked the assembly multiple times and everything was together correctly and in good condition.
3. Overall, I had better results using my old manual crank version.
I can't take half a star and it's really just my laziness to not buy some big tub that'll just fit underneath but I wish the grinding shaft was longer it's just too close to the base so you kind of have to be careful or you make a mess. We grind straight into the containers that we freeze so we are constantly trying to keep things neat.
This is my first grinder, so I have nothing to compare it to, but if you need a grinder and don't want to spend a lot of money, this is a good unit - so far. If that changes, I'll update the review. I was going to buy the Kitchen Aid grinder, but would have needed to get a separate stuffer (because of the height of the mixer) and came across this unit and decided it would be easier and better for a one person stuffing operation. I'm happy with that decision. :)
On top of this, I emailed customer service twice and they didn't even bother responding. We traveled all the way from Canada to pick it up and we now regret it; don't buy this product, spend your money on another brand.
