I regularly seal liquids, dry and moist solids, and modify food texture with this machine. I have not run across any limitations or unusual behavior. I also regularly use the external vacuum port with a Sammic external vacuum seal container and hose. This is great for accelerated marination or sealing delicate items for travel.
The sensor makes sealing repeatable and without disappointment. The Bosch pump will evacuate 99.9% of the air in about 30 seconds a cycle. If you select less vacuum, it is even faster. You can set a 'soft air' function so that delicate items are not crushed with a sudden influx of pressure. It has variable sealing time for bags of different material or thickness. It will also will support alternate gas injection (like CO2 or Nitrogen) for more sealing flexibility. All these selections (percent of air removed, time to hold max air removed, speed of air returned, alternate gas, and sealing time) can be programmed into one of 10 memory spots.
One really great thing with the 310 size chamber. Most counter-top vacuum machines have a chamber that is far more shallow. You can fit a full quart mason jar standing upright inside the 310 and vacuum seal the top on. Great trick for sealing hydrophilic items (sugar, cocoa butter, glucose powder) that results are greatly extended shelf storage.
One of my 310-S is installed at 6,000 feet. Because of the altitude, the evacuation process takes much longer on any vacuum machine. The sensor allows the same method to work both at sea level and higher altitude.
I replaced an Ary 215 with the Sammic 310-S. The Ary has a double seal bar, which is nice, but in every other area the Sammic is superior. The Ary is fine for much lower volume or more occasional use. The more appropriate comparison for the 310-S is more expensive chamber sealers, such as the Henkelman or Minipac. The Ary vacuum sealers are lower cost, but they are not as nice as this machine.
This thing is a very heavy sturdy feeling machine. It has the Bosch pump which is the best out there. This particular model has the ability to hook up a bottle of gas to replace the air like in a bag of chips where you don't want to crush things. It makes it so the food will not spoil. It also has the softair feature which is nice.
I have had this thing for a while now. Ever since the day I have had it, I noticed it doing something that seemed very weird. Everytime I would go to seal things, the bags would air up like a balloon. While this doesnt affect sealing dry things, it completely negates sealing any type of wet foods or soups. It airs up the bag so much the the end of the bag pops off of the heat bar and spills whatever is in there into the machine causing a huge mess. This thing is not supposed to do that.
My friend has an Ary Vacmaster 215 that he loves. He can seal anything he wants on his including liquids and it never fills the bag up with air like mine does.
I dealt with it for quite some time and just used it to seal dry foods like jerky and cheese. One day I just decided to call customer service thinking, I spent over $4,000 on this thing and it should work right. So I call customer service here in the US. I described my problem and they acted like they didn't even want to deal with me. That was a big letdown after spending this kind of money. I expected top of the line customer service. Then he gets my first name and my phone number and says he would have a tech call me. Well guess what, I never got a call. This was probably 8 months ago now. I am considering have a commercial equipment repair shop locally coming to fix it and paying out of pocket.
If you are in the market for a chamber vacuum sealer, stay FAR AWAY from this company. You can get the Ary 215 for around $800 online. Either that or look into a more reputable company.
