It's FAR from a complete guide with careless and dangerous information (or lack there of) about cures.
The pictures are very nice and many of the recipes using sausage are good, but there are recipes for sausage dishes using certain types of sausage, yet the recipe for the sausage itself is missing from the book.
This gets one star for careless handling of the issue of cures (A SERIOUS AND DANGEROUS FLAW) and the fact that it's touted as a "complete guide" which couldn't be farther from the truth.
If you are looking for a truly 'complete' book on sausagemaking, (if there is such a thing) see "Home Production of Quality Meats and Sausages" by the Marianski's, as well as their other fine books.
