Now the concerns, which are minor (I hope):
1) The stuffer came with absolutely no instructions on how to assemble or use it. This isn't too bad as it is pretty obvious what to do. But I don't know which side of the piston/plunger needs to be facing the meat, or if it just doesn't matter. There are two ways you can install the gasket at the base of the "funnel", and I think I'm using it right, but just don't know. Also, there are probably some tips for using it, storing it, or getting the best results that I'm probably missing.
2) As some other reviews had noted, the cap and gasket that screw onto the body to hold the meat funnel in place seems to be the weak link. It seems to be make of either hard plastic or very cheap metal. The threads are not "deep", so I'm not sure how well they grip, or if they will fail over time. If you don't tighten this part very tightly the gasket will be forced out of position and some meat will escape at the base of the funnel. Because I'm worried this part will fail at some point in the future I've tried to purchase a spare or two, but don't seem to be able to get them, or even find any specs like diameter, thread count, etc.
So I'll keep using it and hope for the best. It is so much easier and more effective to use a stuffer (I expect this would be true for ANY stuffer) than using my meat grinder (STX Turbo). If this one does fail I'll buy another, but will be sure I can buy parts for whatever unit I purchase.
sadly ( HA HAHA)I had to step in this year. Self preservation made me start looking for alternative ways. Thankfully I found this on Amazon And it arrive quickly! This system and set up took my husband and I 20 minutes to make 5 pounds of kielbasa for Christmas. Start to finish including making filling, prep of casings, filling and clean up was under 1 hour! Highly recommend purchase. We are the once a year on a holiday sausage maker couple.However several of my friends were not able to purchase their Christmas eve fresh kielbasa!!! That could be a mission statement for a new business!!! you won't regret getting it!
