Sea and Smoke: Flavors from the Untamed Pacific Northwest Hardcover – October 27, 2015
Purchase options and add-ons
A native of the Pacific Northwest, two-time James Beard winning chef Blaine Wetzel saw Lummi Island, a rugged place with fewer than 1,000 residents off the coast of Seattle, as the ideal venue for his unique brand of hyperlocalism. Sea and Smoke is a culinary celebration of what is good, flavorful, and nearby, with recipes like Herring Roe on Kelp with Charred Dandelions and Smoked Mussels creating an intimate relationship between the food and landscape of the Pacific Northwest.
The smokehouse, the fisherman, and the farmer yield the ingredients for unforgettable meals at The Willows Inn, a reflection of Wetzel's commitment both to locally-sourced ingredients and the sights, smells, and tastes of the foggy, coastal environment of Lummi Island. Award-winning journalist Joe Ray tells the tale of the Inn's rise to stardom, documenting how all the pieces came together to make a reservation at Wetzel's remote restaurant one of the most sought-after in the world.

- Reviewed in the United States on October 6, 2017This book is fabulous! We have family up in the PNW and are always inspired by the culinary arts up there. Sea and Smoke really goes to lengths to make smoked dishes and classy seafood accessible to the home chef. The recipes are straight forward and easily understandable. Some of the ingredients might be hard to come by depending on your local availability, but substitutions can easily be made.
I recommend giving this as a gift to a food enthusiast or buying it for yourself if you are curious about this cuisine.
- Reviewed in the United States on November 21, 2015I really love that this book isn’t just one thing – it’s a deeply engaging account of people doing amazing things with food in a magical part of the world, a beautiful photo essay, and a collection of recipes that I’m eager to try out, but that also just make for fascinating reading. I’ve visited Lummi Island twice for short trips, and eaten at the Willows, and this book was a great way to go beneath the surface, to really learn about the island and how the great food I enjoyed ended up on my plate. But even if you haven't been, the book does a wonderful job of evoking the island and the inn.
- Reviewed in the United States on October 29, 2015in his Foreword Grant Achatz speaks of chef Blaine Wetzel's determination, confidence and unabashed ambition. Those words fit Sea and Smoke just as well. The photos are stunning, Joe Ray's essays are lovely, and the recipes — let's just say I can't wait for my mother to try some of the delicious meals described here. What a great, original and artistic combination of travelogue, photo collection and cookbook. A true joy to see these masters of their crafts come together. Tip: the ultimate (Christmas) gift for anyone interested in food.
- Reviewed in the United States on June 7, 2017Challenging recipes but well worth the struggle. The stories that went with it were interesting but lacked a real punch, more research into the culture might have helped this be an outstanding read.
- Reviewed in the United States on October 29, 2015I've eaten at the "Willows Inn". The food is spectacularly delicious~ Blaine Wetzel does amazing things with salmon, kelp, crabs, herbs, meats and all the rest. I pre-ordered my Kindle version of "Sea & Smoke" and can't wait to try the recipes. The colour photos really come through on the Kindle Fire, bringing me back to Lummi Island. My tummy and palate alike thank you, Joe Ray.

- Reviewed in the United States on October 29, 2015Such an amazing book! This is not your typical food or cook book, but truly an meditative experience melding words, amazing photos, gifted chef and writer, and honoring the land, sea and earthly wealth of Lummi Island. Fortunately I have had the gift of experiencing Blaine's skills and the true beauty of Lummi. This book captures both.
- Reviewed in the United States on September 17, 2017Boring. Nothing worth learning.

Very good book

The only thing better than this cookbook is the opportunity to eat at this great space. Everything from the first drink out on the verandah to the last crumbs of dessert were spectacular. I am so going to try the smoked salmon, and I know it will not be as good, but it will be better than 99% of what else is out there.
