Water spinach (rau mu?ng in Vietnamese, ong choy in Cantonese) is a super popular green vegetable in Southeast Asia and Southern China, where it grows literally like a weed. The tender leaves and tops are boiled and stir-fried. The tougher, hollow stems (about 1/4 inch wide) are resourcefully split so that they're easier to chew.
In the Vietnamese kitchen, the shreds of stems are soaked in water until curly and crunchy. There's just a slight grassy flavor in the stems, which are enjoyed mostly for their nutritional value and texture.
Typically, the shreds are lightly dressed with a vinaigrette for a salad or set out as a noodle soup garnish for guests who want to add extra crunch and fiber to their meal. (Eating too much of the stems, however, may lead to constipation.) Indeed, there's little waste when you're feeding lots of people.
A knife is traditionally used to split the stems, but the modern water spinach splitter (dao ch? rau mu?ng, literally “knife for splitting water spinach”) works much better and saves time.

1st splitter: the plastic part kept falling apart & off the metal splitter so I had to wear cut-resistant gloves to use it. It's very hard to split through the water spinach's nodes (those water spinach were grown by my uncle, they're big, not the baby/small & soft ones at Asian markets). I did just like the attached instruction & it took a long time to split enough for 2 bowls of "bún riêu" - a Vietnamese noodle. To make it easier, I had to cut the spinach into very short one, get rid of the nodes so it can go through fast.
For the price (almost $10), I expect it to be much better, this one, I don't think will last at all & it takes too much time just to get rid of the nodes in order to split the water spinach. If you're more patient & have time, this can be considered a kind of "meditation" for you to train your mind then you can try it.
Update: I went to a Vietnamese grocery store in Virginia & bought the same one for < $4. It's from the same company but this time, the splitter is stronger or somehow it didn't fall apart like the 1st one. I guess I'm luckier this time. I also bought water spinach from an Asian grocery store & it's small, much younger. I cut them at the length of 2 inches & was able to split them very easily with this splitter. As the splitter didn't fall apart, & I didn't have to keep putting it back, I could split the spinach much faster. I'm happy so I increase it to 4 stars.
Conclusion: if you've very young water spinach & are lucky to get one splitter that holds up every usage, then you can be happy with it. If not, it will be very frustrating!
