Miso is a base for many Japanese-style soups and other food treatments, no western substitutions are possible. This is my first experience with miso and a positive one. It is salty and assertive, but it IS a fermented concentrate after all. Buying the 2lb. size is the only practical way to stock this item at home, IF one is serious about learning its uses. It stores beautifully in the fridge after opening. The flavors are a welcome change from the usual euro-inspired fare and is far superior to the "plastic" asian food to which we westerners are subjected.
Storage is no problem. Clip one corner of the package and squeeze the miso out like toothpaste to measure. Then, squish the paste back to the package bottom, squeeze air out, roll/fold the clipped end under and fasten with a clothes clip, big paper clip, etc. Stores for many months in the refrigerator.

The bag of miso comes in a little large but I broke it up into serving sizes and froze it. I made a pink grapefruit salad dressing to go over a salad (great summer salad). 1 tablesoon of orange juice, 1 tablespoon of white wine vinegar, 1 tablespoon miso paste, 2 teas of diced onion, 2 teas olive oil, salt and pepper. make your salad using romaine, sliced red onion, slice fennel cut up boneless skinless cooked (store bought rotissarie is good), and red grapefruit sections.
I also made a mushroom soup with onion, garlic mushrooms, rice noodles and miso paste, vegetarian broth.

I've bought several brands of miso paste on Amazon that I use mainly for miso soup (with and without homemade dashi) and sometimes for marinades, etc. While I prefer the silky texture of this miso to some others that have a lot more soybean remnants, the added salt is too much for me and I love salt. I can hardly taste the miso flavor; I really just taste salt. I rarely review on Amazon, but I felt strongly that there are much better miso pastes available. I will not purchase again.

Miso paste produces a sweet, salty and vinegary sauce when diluted with water or wine, perfect for dipping and it's addictive. It's an extremely healthy, gluten free vegetarian soy based product. This item comes in the traditional paste form which is meant to be diluted with water (I use wine when making salad dressings), and it's pocketbook friendly. Don't bother with expensive pre-mixed small jars of Miso from the gourmet section. Buy this large portion of 'paste' and dilute it yourself and produce 10x's the amount for about the same price. The paste freezes well and when you need to dip into your freezer stash you only need a sturdy spoon to scoop out the appropriate portion because it doesn't freeze solid, (just like good vodka, heehee). I fold the bag at the top then rubber band it and stick it into a gallon zip lock bag before freezing. During Fall and Winter months I have freshly prepared Vietnamese Spring Rolls for breakfast and lunch almost every day. Spring roll ingredients hit all the places on your palette and it took me 2 years to discover the perfect sauce to compliment the rolls: Miso! Vietnamese spring rolls are basically a layered salad containing salty, sweet, savory, el-scorcho, creamy and crunchy, all stuffed inside a rice paper wrap and eaten by hand. My personal recipe: In large low-rimmed bowl or Tupperware, immerse a sheet of round rice paper in hot tap water for 10 seconds, shake off excess water and flatten the paper on top of a plastic cutting board and smooth out any wrinkles. On top of the wet paper, layer/stack modest portions of 9 ingredients. Work fast: Lay 2-3 pcs romaine lettuce (w/out core) just below the imaginary half way line of the paper. It's ok if lettuce sticks out slightly outside the edges of the damp rice paper.Read more ›

I had heard of miso for years, but was reluctant to use it as I avoid most soybean products. I make a lot of my own broth, and a spoonful of this miso paste adds so much flavor. I only purchase non-GMO and non-MSG foods, and that was the deciding factor in this purchase. ...Over a year later (May 2013) and several additional purchases of this great product, I have added using a plain miso soup made with this paste to my rice cooker to add awesome flavor to my rice. I'm adding a takoyaki cooker (from Amazon, of course!) to my repertoire of cool kitchen tools and plan on using the miso broth instead of water to bump up the flavor there as well. Amazon - you are my hero!

Way to expensive on line. I found it cheaper at the local oriental market. It was 4.99 only and it's fresh. Next time I go there I will look for Dashi to compliment the Miso paste for an authentic Miso soup.
