Product Description

Aptly named for what it does best - cutting vegetables, thin-boned meats, and fish - the Shun Classic Hollow Ground 7 in. Santoku Knife is one knife you'll love for these essential tasks and more. Crafted from Shun's VG10 steel known for its incredible edge retention, this blade is clad with Damascus stainless steel, then bead-blasted to reveal an eye-catching wood grain pattern that allows the blade to slide easily through your food. The hollow-ground indentations on the blade help reduce friction, so the blade effortlessly releases your food. The result of this detailed craftsmanship is a knife that is sharp, durable, and corrosion-resistant for high-performance slicing, dicing and chopping. Whether you pick up this santoku for dicing an onion or cubing stew meat, you'll appreciate its usability and precision cutting power.   About Kershaw Shun Knives For more than 100 years, the highly skilled artisans of KAI Corporation have been producing blades of unparalleled quality in the spirit of the legendary sword smiths of Japan. I've been using a 4 star Henkel knife for 15 years now and was skeptical about buying a Japanese knife. I'm glad I did though. This knife is beautifully sharp. It holds its edge and is easy to hold. I hold my knives by the blade so the handle isn't a big deal to me. Every time I cut something I smile. I think I will be buying all shun knives from here on out.

I've had this knife for about three years. I use it fairly often and haven't had the need to sharpen it yet. I also hand wash it and keep it in a edge protecting sheath when ever its not in use. The whole shun line are really good looking knives.

I did a lot of reading and asking around before I bought this and a pairing knife of the same kind. They are known for their ability to keep an edge longer than their German counter parts. One reason for this longer edge retention hasto do with the hardness of the steel. The hardness also hurts the durability a bit, as they are easier to chip than knives with a bit softer steel. So don't drop them.

The handle is why this knife looses a star with me. Its really beautiful but Its a bit small for my hands. I'm a man with averagely large hands. A bigger and more ergonomic handle would give me more control in cutting. That being said, its not bad by any means and I don't really feel like I have to buy another knife because of it, it could just be better.

So I'd recommend getting the knife in your hand before buying, it could be a perfect fit for some.

Probably one of the best knives you can buy (and being a Chef I've used a lot) SHARP and stays that way.
