I was tired of not having a good knife to cut large birds or beef roasts with. I don't use this knife a lot, but it was still a good investment. It cuts through meat beautifully. It is is nice and long so it has plenty of room to cut through capon, prime rib, and pork roast.

The handle makes the knife comfortable to use. I clean the knife using a natural bristle brush and hot water. This knife is as to be expected, is super sharp, so keep away from kids and fools. There is a serving fork that goes with this, but unless you are using this kind of set up at least once a week, you can get away with buying a lower cost fork.

While to a more novice cook might find the price excessive, odds are if you're looking at a knife like this you're less shocked by the price. But plain and simple, for the construction quality and design, this is actually a very good deal knife.

Fanastically sharp, thin but not flexible blade, lovely shun handle (right handed shape for this line of shun blades, not impossible for a lefty to use but you should definitely be aware before purchasing).

Use for thinly slicing ANYTHING, raw fish is my primary usage, wanted something with great quality but didn't need as much maintenance as a traditional sushi knife. If that's what you're looking for, this is the right knife.

Kershaw-Shun makes the best knives I've ever owned, bar none. They come with a razor edge and are easy to re-hone with just a few strokes on the Kershaw-Shun steel (well worth purchasing to accompany this set). All their knives utilize the damascus pattern and perfectly crafted profile slice through darn near anything (food-like anyway) with ease. The scalloped detailing on this one creates air pockets which prevent food from adhering to the sides, creating even better cutting efficiency than their already high level. I can cut perfectly thin, beautiful slices from any fish time after time using this fine knife. The weight and balance are perfect. It is designed for right-handed chefs with a d-shaped handle so if you are a leftie it may not be as comfortable or easy to use.

Astounding quality at reasonable price.

If your fantasy is to imagine people in your kitchen having dropped jaws when they see your knives, Shun is the only answer.

Do knives define a chef? I suppose if you are into cutlery Shun would be at the top of the list.

I have a bunch of Shun knives, I've gifted more, and no one has been disappointed.

Do be aware, they are scalpel sharp.

I believe if you're serious about cooking, you should own great cookware and excellent knives. I finally stepped up and got excellent knives. For those who haven't heard the hype, Shun is one of the most respected knife brands in the world. Check them out on the Web at kershawknives.com.

Great features of the entire line include these cool "D" shaped handles that fit your hand better. Every Shun Classic knife is made in a right- and left-handed version (chefsresource.com for lefties). The handles are made of wood and are specially treated. The steel used for the blades is harder than what you would find in most other knives. The knives are EXTREMELY sharp. One thing to note about Asian knives is that they must be sharpened at a different angle, 16-18 degrees vs. 20 degrees for German knives. The Shun steel takes the guesswork out of getting the angle correct because of the flat edge on one side of the metal disc below the handle.

9-Inch Slicing -- This is an impressive knife. It's sleek and sharp like the rest of its siblings. I know the granton edge is supposed to reduce drag, but I'm not certain this is a necessity for a knife I use three times a year. There is a version without the grantons that's a few dollars cheaper.

This is an expensive, but lifetime investment. I encourage you to visit stores and feel the knives in your hand to make sure you are comfortable with them. I'm a big fan of Shun knives and own several other. You could get away slicing meat with a chef's knife, but the low profile and length on this make it much easier. The metal on these knives are brittle, so you need to take care to avoid hitting the fork. Also be sure to cut on wood or plastic only. If it's your first time with a high-quality knife -- these things are sharp, so be warned. Electric knives shred the meat and seem to make more juices fall out, not the case with a manual knife like this. Pick up a smooth honing steel if you don't already have one to keep the edge straight.
