Sanoku (a Japanese word meaning "three virtues") knives are perfect for slicing, chopping, and dicing. Elegant and beautiful, Shun Premier knives are unlike any knives you've owned. Featuring VG10 Japanese steel cutting core with 32 layers (16 per side) layered Damascus steel for strength, the hand-hammered finish (known as 'tsuchime' in Japanese) lends not only to the beauty, but creates the hollow-ground feature that reduces knife-drag and prevents food from sticking to the blade. The gorgeous Pakkawood handles in walnut finish are both sleek and stylish, and are shaped to fit the palm of your hand in a variety of secure and comfortable grips. After over 20+ years of Wustof Classic loyalty, collection, and use, I decided to research knives that might take me into the next decade or so. After over 20+ hours of internet research that included learning about the various steel types, steel production, steel history, cutlery companies' histories, blade development, the art of sharpening, and numerous online blogs, posts, reviews, and opinions about knives with costs ranging from $150 to $1800, I purchased the Shun Premier Sumo Santoku--and it makes me smile every time I use it.

Criteria for my choice:
1. UTILITY--(Is it useful and will I use it?)
2. CRAFTSMANSHIP AND QUALITY (Is it made with great skill and care, attention to detail, and with fine materials?)
3. WEIGHT AND BALANCE (Does it feel good in the hand, balanced, maneuverable---like a finely crafted tool?)
4. DESIGN (Did quality of components, intelligent thought, and applied successful experience go into product design?)
5. APPEARANCE (Is the knife aesthetically pleasing and does it look like it reflects criteria 1-4?)
6. PRICE-(Would the price paid result in satisfaction?)

Like I said earlier, the Shun Premier Sumo Santoku makes me smile every time I use it. The fine kitchen tool represents a very satisfied "Yes" to all criteria questions listed above.

I like the Shun Premier Sumo so much that I purchased the Shun TDM0729 Premier Honesuki Knife, 4-1/2-Inch which I like equally as well and has now become my go-to knife.

I own an entire set of Shun Premier, and I'd say this is my favorite knife. Sort of a lightweight cleaver/chefs knife hybrid. Plenty of clearance between your knuckles and the cutting board, making it ideal for chopping (veggies, meat, whatever).

Generally, I cannot say enough about the Premier series. The craftsmanship feels better than the Shun Classic knives I own, and the steel feels more rigid and strong (could be my imagination!). They just feel SOLID. Also, the handles on the Premier are fatter, filling your hand completely, even on the smaller knives. This assures a solid grip, makes them more comfortable to use, and balances the knife evenly. I always felt the handles on the classic series were too thin.

My pathetic writing ability can not describe how wonderful this knife is. If you think you have a sharp Wustof, you don't. The sharpness of these Shun knives is to the point of ridiculous, except it is wonderful, if not a bit intimidating; as you transition from a German blade (20 degree cutting edge) to a Japanese blade (13 degree) you will lose finger nail surface and some skin, these Shuns are that sharp and aggressive. Have been doing prep and deep prep knife work for years, I'm very comfortable behind a knife, but it has taken me about three months to adapt to these knives, but there are some things I still won't do that were like second nature with a Wustof (using my hand as a backstop without a glove when mincing garlic or chopping herbs), nope, the glove goes on now, always. Anyway, Wustofs and Shuns are both excellent knives, but some excellent is more excellent then others.

I was looking for a knife a bit larger than my Wusthof Santoku for larger fruits and vegetables coming into season. Specifically, watermelon, cantelope, rutabagas and various squash. This knife performs flawlessly and cuts through these items effortlessly. It works equally well when I task it with fine mincing garlic and herbs. All in all, this has become my "go to" knife. I'd recommend it to anyone!

Just fantastic. Great weight and balance with a keen edge that stays very sharp. You will get spoiled using the wide blade. It works like a spatula. The handle is beautiful but can get a bit slick. It does clean up very easily too.

This was my first Shun knife. I have a variety of German knives and love them. This knife is wonderful. It's a nice size. Large but not awkward for me to use. (I have small hands) It is so sharp and balanced. I love it so much I ordered another Shun for my collection.
