The Shun Premier Kiritsuke Knife is a generously sized all-purpose kitchen knife meant to complete several cutting tasks around the kitchen. Kiritsuke is the only multipurpose traditional Japanese knife, and in Japan only the executive chef in the kitchen is allowed to use one. This 8-inch knife blade slices, dices and minces-making it the knife you'll reach for again and again. Elegant and beautiful, the Shun Premier line of knives is unlike any knives you've owned. Each blade has a cutting core of Shun's proprietary VG-MAX "super steel" to take and hold a precision edge. Featuring layered Damascus steel for strength, the hand-hammered finish (known as 'tsuchime' in Japanese) lends not only to the beauty, but creates the hollow-ground feature that reduces knife-drag and prevents food from sticking to the blade. Ultra-thin and incredibly sharp, these blades feature a 16-degree blade angle making the blade flexible, but much sharper than traditional Western knives. The gorgeous Packwood handles in walnut finish are both sleek and stylish, and are shaped to fit the palm of your hand in a variety of secure and comfortable grips. Thanks for taking the time to post a review! Do you have a Shun Honing Steel? if not, it's just as important as the knife to keep that factory sharp edge and elongate time between actual sharpening of the knife. Once a week maintenance at our 16 degree angle (the collar on our honing steel is set at 16 degrees to help you out) 2 - 3 times per side, is all you need to do. Whetstones are great, but unlike using our honing steel, you're sharpening and removing bits of metal with the stone. For regular daily use of our knives and weekly use of our honing steel, you shouldn't need to utilize a whetstone to sharpen for quite some time - perhaps a year or so. It's all depending on how you use your knife of course, what surface you're cutting against (Shun highly recommends our Hinoki wood cutting boards - the softer the wood, the better for all knife brands. Stay away from glass, metal, ceramic, extremely hard woods, composite and plastic boards - plastic eventually compresses, making them a very hard surface to cut against and dulls knives quicker).

One thing I love about this Kiritsuke is that it has a little heft to it. It's extremely well balanced and razor sharp. If you get it you won't be disappointed.
If anyone looking to purchase a Kiritsuke Knife may I suggest that you look at their Classic line, a little thicker and nicely balanced for all around slicing and chopping.
I use this for slicing thin cuts for vegetables and proteins, provide a nice sharp edge for this format.
