The Shun Dual Core Kiritsuke knife is generously sized and meant to complete several cutting tasks around the kitchen. Kiritsuke knives are the only multipurpose traditional Japanese knife, and in Japan only the executive chef in the kitchen is allowed to use one. Why Dual Core? Winner of the Blade Show 2014 Kitchen Knife of the Year, the Shun Dual Core series of knives creates for the first time, knives made of true layered and fold-forged Damascus from two premium quality stainless steels. Each knife features 71 alternating micro layers of VG10 and VG2 high-carbon, high-chromium stainless steels. The layers are welded together and fold-forged to give a finer grain to the steel and to create a beautiful blade pattern. This dual core construction features both steels going all the way to the edge of the light, thin blade. Each knife boasts a razor-sharp 16 degree angle, for the ultimate knife experience. Although thin and light, the blade is very strong, and is Shun's sharpest blade edge yet! During normal use, the two steels on the edge wear at different rates, creating micro serrations along the edge so the extremely sharp edge feels sharper, longer. The knives are made with a traditional Japanese octagon-shaped handle in ebony Pakkawood. Pakkawood is made of resin-impregnated hardwood, and is NSF Certified for use in commercial kitchens. There are many styles of Dual Core to choose from, and Shun will have what you need, whatever the job! Produced in Seki City, Japan, the capital of samurai sword manufacturing. This is the sharpest knife I have ever held and used. Everything I have sliced has felt like I was cutting warm butter. I have used it to trim up a beef brisket, serve that brisket and even trim down skin on beef feet for my dogs (skin and tendons). Nothing has given this knife a challenge.
Spend the extra money. This knife will not disappoint. It is built to last.
That being said, I purchased this knife about 1 month ago from another site due to a promo being offered otherwise I would have gone through Amazon for that first purchase because the purchase price was the same on both sites and Amazon would have had it to me faster. Now, I'm back to buy a second one to give to my mother for Mother's Day and this time it was ordered on Amazon! Gotta LOVE SAME DAY SHIPPING in the Phoenix, AZ area, and on a Saturday, thanks AMAZON!
Anyway, about the knife, you can probably tell I'm a huge fan since I'm buying the second one. bought 2 of these and I am. I've always owned decent knives that got the job done but I've never invested in a high quality chef's knife until I bought the first Shun Dual Core 8" and I had no clue what I was missing! This knife is not only extremely bad ass looking but it's so sharp and when use with the proper cutting motion it's cuts so easily that it's almost scary. In fact my girlfriend won't use it due to fear of putting more than heart and soul into a dish! lol It's so sharp that if you were to have an accident you probably wouldn't even know you're cut and/or missing a part of your phalanges until there was too much blood to not know!
Highly recommended as your go to chef's knife or if you just want something to show off, either way when you're using it there is no way you can't look like you know what you're doing in the kitchen, unless of course, you're bleeding!
I will be buying the other Shun knifes in the Dual Core line and probably more beyond those to eventually have a Shun for every kitchen application!
Just be sure to clean and COMPLETELY dry the KNIFE and HANDLE IMMEDIATELY after use and before storage to ensure a long lasting and beautiful piece of cutlery for years to come.
It fits my cutting style perfectly. If you are a chopper rather than a slicer you may want to get a heavier knife.
I also bought the 4.5 inch one and they are a great pair.
Not cheap (at all) but worth the expense.
