I have made several batches of gluten free items (cupcakes, muffins, egg/quinoa frittatas, etc). I have used various recipes and found these baking cups to be a great value and very easy to use and clean. We have not greased these prior to baking and have had good results with gluten free recipes, no food sticking issues at all.
I recommend using a muffin tin for the best results, pulling the baked goods out and cooling for 3-5 minutes before removing from the liners. We have not experienced sticking and have not greased or oiled the liners prior to baking. If there is a 2nd batch to cook, we cool the muffin tin with cold water and then put another batch in (having 24 liners is helpful). We tried a baking sheet and the bottoms of our muffins were overdone- not horribly, but they did not have the even cooking results that a muffin tin produces.
For cleanup I put the liners in a soapy water for a minute, scrub with a soft brush and then rinse. I air dry or dry with a dish towel. I have not attempted dishwashing as we haven't had any caked on food particles and a simple soak and rinse works well.
Be careful about putting them in the dishwasher, though. I was only able to clean them a few times this way before one of them fell off the top rack and onto the heating element, which partially melted the cup (the cup, however, is still useable for baking and whatnot. Fortunately it did not burn bad enough that I had to throw it out). It isn't that much work, anyway, to wash them by hand. Simply turn them inside out, throw them in some soapy water, give them a quick rub down, turn right-side out again, and either air or towel dry them. Super easy!
One thing I do not like about these cups, though, is that they contain fillers in the silicone (they showed white when put to 'the pinch test'). I bought them assuming that they were filler-free (based on what I was reading from other reviews) but these cups do contain fillers, which will cause the cups to lose elasticity and dry out over time, consequently making them a lower quality cup than one made of pure silicone. They still work wonderfully for now, however, and I am very happy with them otherwise.
I've also made a couple of batches of mushipan (kind of like muffins, but steamed), and again, I really liked the results. They weren't perfectly non-stick, but nothing to complain about, I don't think. I also made two little souffle/custard things with the last tablespoon of mushipan batter and some egg yolk/milk/sugar. I also used one as a sauce cup for my steamed buns, lol. They hold sauce admirably, and I'm sure they'll work fine as ingredient cups as well. They're fun, versatile little things lol.
The box they come in is convenient for storing them, and they're easy to clean, although they won't really work with the dishwasher--they just flip and fly around. Overall, I'm really happy with the things, and my mom is jealous. She figured I was wasting my money, but now she wants some. XD
I have used these for muffins and mini cheesecakes. I wasn't sure about the cheesecakes, but the silicone peels back so easily. Also using for my grandson's baby food. After we cook and puree green beans, carrots, etc. pour into the muffin cups and freeze. They pop out easily and are a perfect serving size. I can think of so many uses -- a fun way to serve a snack to a 4-year old as well as muffins, mini cakes.
I've ordered two sets of 24 (one for my daughter) I'm so happy with them. Just be sure they are The New York Baking Company and fulfilled by Amazon
