On the "pros" side, I like the fact that the sides are smooth, not "imitation corrugated" like some of the silicone muffin liners for sale. I also experimented with a batch of raisin bran buttermilk muffins, which are substantial in texture, not "delicate" - they took 35 minutes to bake in the metal "Texas" pan, and 35 minutes to bake in these pans, though the size is somewhat smaller than the "Texas" pan. The pans clean up very easily, which is also a plus. While I did notice a chemical odor in the first 15 minutes of use, this faded away as the baking continued, and did not return on the second use of the pans. I did not detect any transfer of the odor to the finished muffins. The pans are well-made, and look like they will last well, which was important to me, as my reason for looking at silicone in the first place, was to avoid having to buy paper muffin-pan liners which are one-use-only, and the cost mounts up over time.
On the "cons" side, the muffins did stick, as other reviewers mentioned. There was residue left on all the surfaces, but the biggest problem was with the bottom of the muffin. Having read the reviews, I tried cooling them for 10 minutes and removed one. The bottom stayed in the pan, though I flexed the sides and then pushed up from the bottom. I had the same result at 20, 30, and 40 minutes cooling time. When I made a second batch, I left all 12 muffins in the 2 pans for 3 hours, 'til they were cold. I still had 2 bottoms left behind in the cups, as I attempted to flex and push out the first 6 (interestingly, the middle 2, where there is less accessibility to flex and push, just given the nature of the design of a pan rather than individual liners). It seems to me that the depth of the cup is the problem, as by the time I pushed up from the bottom to release it, the cup flexed in at the sides and basically sliced off the bottom! On my final attempt, with the 2nd pan of cold muffins, I tried turning the whole pan upside down, flexing the pan to loosen the sides, and then gently pushing on and tapping to loosen the bottoms. Gravity did the trick, and they all came out in 1 piece. It was tempting to say "OK, I can make this work", but the final "con" decided me against it. Going back to the narrower size of the cup, compared to the equal depth between these pans and the Texas-sized metal pans, which I mentioned initially, the muffins are top-heavy with a narrower base to support them - and so they easily tip over onto their sides when arranged on a plate.
I truly regret to conclude that I will be going back to my old, well-worn Texas-sized metal pans and paper liners.
Update: I did find that these work really well, when greased, for baking muffins that are yeast-based, but are of the consistency of batter. Batter-type muffins stick a lot to the sides of paper liners,and a lot of the muffin is left behind when peeling off the paper - but using these pans and a little grease, they lifted out beautifully. So I'm keeping them after all, and upgraded my rating to reflect being more happy about the purchase than I was.
Nothing sticks, and everything releases and slides right out after baking. They are super-easy to wash, and even if I drip a little on top while filling, it pops right off with zero effort.
The only advice I'll give is that if you are filling these a mixture that is rather liquid, place the cups on a baking sheet prior to filling, or you won't be able to move them without spillage. This not due to any fault with this product, just the nature of the highly flexible silicone material.
