The instructions have you fill the cups halfway. However, I found that made for a skimpy cupcake. Next time I will fill 2/3 to get the baked cake to rise closer to the rim of the paper. The cups are nonstick without any spray as advertised, bake well, and kept their color/did not get grease spots. I baked them on Sunday, refrigerated them until Tuesday, and served them at a party Tuesday afternoon after letting them sit out for a couple of hours to get to room temperature. I frosted them about an hour before serving. I was pleased that they stayed looking great. Everyone oohed and aahed at my cupcakes, even though it was really just the papers that made them so pretty.
The two negatives: (1) this is a bit small, between a regular size cupcake and a mini one--but the large cups are too big for my taste. I wish they had a size in between. (2) to eat them, you have to tear the paper away, which can be a bit tricky with an iced cupcake. I think the beautiful presentation is worth it, but one of the partygoers did not like this. You could also eat them out of the cup with a fork.
It also takes a bit of care to fill them. Because the cupcakes did not rise all the way to the top, any batter drips on the inside upper edges of the paper baked to an unattractive dark brown crust. Icing hides this, but I am trying these out for a frost-it-yourself cupcake bar. I will probably have to fill them with a pastry bag. And definitely be sure to clean up any drips on the outside of the papers before baking.
I thought these would work ok and it turns out they're just awesome. I'm buying more just because I want to make more pretty cupcakes.
One terrific aspect is that you can bake them without a pan.
