Cooking with Nonstick
Do not use cooking spray. Aerosol cooking spray leaves a gummy residue that is difficult to remove, and that residue will cause food to stick.
Use the right heat setting. Use medium-high heat for searing, sautéing, frying and stir-frying. Use low heat to warm foods, simmer or prepare delicate sauces.

For the first few months this was perfect, everything cooked beautifully and slid off the pan onto my plate. Awesome. Then slowly things just started sticking to it until now it's impossible to cook anything on it without it sticking to the bottom like crazy glue.
I've only ever washed it in warm soapy water with a sponge or a very soft brush, never with anything harsh or abrasive. My wife didn't kill it either, she never washes the dishes so I know it wasn't her that ruined it! I was going to put it in the dishwasher one day but looked on the manufacturer site first and it said not to. I never really used it at a really high heat either, I just don't get why it failed so fast. You get what you pay for I guess.
I've added a picture of cooking a quick serve of scrambled eggs with avocado and tomato. Sticky, sticky, sticky. Move on to another non-stick pan and buy that. I probably wouldn't get this one.
Great pot with great Performance!
Having had several pans over the last ten years, I can say that we both like this one the best.
I never overheated this pan. I cooked scrambled eggs with butter on it two times, and let it cool to room temperature before washing it.
I am tempted to get another and try again. It seems unlikely a major manufacturer would have a highly rated product that does this consistently.
I bought this pan in 2009 and we've been using it 2-3 times a week for omelettes and sometimes a quick stir-fry and it still looks new and is in perfect condition. Nice fitting glass cover so you can keep an eye on what's cookin', but I don't like cleaning the glass.
I learned a long time ago that I've got to be a little careful with Calphalon non-stick - or any non-stick stuff - by using plastic or wooden utensils, not overheating the pan, and ixnay on the oil spray (it will eventually leave a permanent build-up). I have committed all these sins and stupidly ruined a couple of pieces of some really nice Calphalon.
Calphalon makes great kitchen-ware, and this omelette pan is as good as any of them.
The non-stick surface of this skillet heats evenly no matter what you are cooking, there is approximately 9.5 inches of the bottom of the skillet that contact's the stove top, the overall opening of the skillet is 12-inches. We only use soft silicone utensils or plastic utensils to keep from scratching the finish and we never have any problems with cooking. The lid is a great addition that helps to reduce and minimize spatter on the stove top. Wife and I both like the long handle, it give you plenty of leverage in picking up the skillet and stays cool throughout the cooking cycle.
Clean up is a breeze, just allow the skillet to cool, then wash at the sink with a detergent such as Dawn, using a soft sponge. We never put this in the dishwasher, would not think of it as we feel it would damage the finish on the skillet.
