Cooking with Nonstick
Do not use cooking spray. Aerosol cooking spray leaves a gummy residue that is difficult to remove, and that residue will cause food to stick.
Use the right heat setting. Use medium-high heat for searing, sautéing, frying and stir-frying. Use low heat to warm foods, simmer or prepare delicate sauces.
Use the correct utensils. Use only plastic, coated, nylon or wooden utensils with Calphalon Nonstick cookware to protect the pan's nonstick finish.

Top Customer Reviews
I tried this pan after the Consumer Reports gave it a good review. This pan lasted 5 months almost, under the exact same conditions as the T-fal.
I don't think there is a nonstick pan that will last all that long. I'm trying a ceramic Ozeri pan now, but I bet it wont last either. I recomend the T-fal pan over this one. I believe its the professional nonstick, with the thermo spot and the thick induction base.
I bought this pan in 2009 and we've been using it 2-3 times a week for omelettes and sometimes a quick stir-fry and it still looks new and is in perfect condition. Nice fitting glass cover so you can keep an eye on what's cookin', but I don't like cleaning the glass.
I learned a long time ago that I've got to be a little careful with Calphalon non-stick - or any non-stick stuff - by using plastic or wooden utensils, not overheating the pan, and ixnay on the oil spray (it will eventually leave a permanent build-up). I have committed all these sins and stupidly ruined a couple of pieces of some really nice Calphalon.
Calphalon makes great kitchen-ware, and this omelette pan is as good as any of them.
One word of caution though. Get the nylon turner and tongs. Do NOT use metal utensils with it, or you will scratch the crap out of it and render it's magical non-stick properties useless.
Still, 2 things in its favor: nice cover, and nice shape -- the sides are fairly steep so stirring doesn't toss things out of the pan ... which is an issue with my latest purchase: Farberware Restaurant Pro Aluminum Nonstick 10-Inch Skillet, Silver
