OMG this is one of those how did I live w/o it pans! My old egg poacher w/ it's prehistoric Teflon that had worn off (OK it was also my mom's) had seen better days and I finally replaced it w/ this since I like my Calphalon cookware so much & love poached eggs. The eggs are easy to remove (you can lift each cup out w/ tongs or a fork) so you can have some eggs soft and cook ones for those who like hard yolks for longer. My old pan would not do that, you could not remove each cup individually. The glass lid makes it easy to keep an eye on them and get them exactly how you like them. The eggs slide right out, but I do use a small piece of butter. You can also take the insert out and use the pan as a small skillet as the bottom is coated like any Calphalon pan is. It's a handy size to reheat leftovers or fry up a small portion so this truly is a multi-tasker in the kitchen. If you really like poached eggs, are picky about how they are cooked & make them often this is worth the price, remembering that you can also use the pan every day for other foods. You may also be able to find it cheaper elsewhere, so shop around. In my experience, cheaper cookware does not last long and really does not save you much money as you replace it more often, so if you are serious about cooking & poaching eggs but cannot afford the fancy professional quality stuff, Calphalon may be perfect for you!

This is the best egg poacher I have ever purchased and it is the most expensive. I decided to buy it because every other poacher I tried in the below $25.00 range would not hold jumbo eggs or the non-stick surface would fail within a short time.

The Calphalon 4-cup egg poacher cooks jumbo sized eggs in 4 min and 45 seconds; normal for a steam poacher. The jumbo eggs work well in the cups, but I have had some very large jumbos that actually overflowed the cups. Extra large eggs would never have this problem.

The pan is quite heavy and sturdy. The handle is a little small in diameter, but not a problem. The cover is fairly heavy glass and gets very hot; the small cover handle can lead to a burn if you don't use a potholder. The support frame that holds the egg cups has a small handle in the center. I use tongs to lift the frame from the pan when the eggs are done, otherwise I would burn my fingers.

The 4 egg cups are coated with a non stick material which is still as good as day one after more than 6 months use. I use a little butter in each cup just to ensure easy removal; I have not had a single egg stick.

Cleanup is very easy. I just dry off the pan and cover, then spray the cups and support frame with hot water. I dry the egg cups with a paper towel without using any soap to keep the non stick surface "conditioned". The frame is a little hard to dry because of the groove around the outer rim; it tends to hold water.

The pan is usable for other purposes, although I have never tried using it for anything but as a poacher.

Eggs cook more evenly compared to other egg poachers I have owned. Finished eggs release easily from egg cups provided you coat them lightly with oil (sprays not recommended) or butter before using.
The negatives: Shallow egg cups barely hold a jumbo egg. Hot egg cups are a bit tricky to handle. (I use silicone coated tongs.) The design of the egg cup handles could be much improved.

A bit of a learning curve but works wonderfully

Takes a few tries to get the hang of, but once you do, poached eggs are a breeze! The biggest hurdle is figuring out the timing because everyone's stove is different and it varies depending on electric vs. gas so you really do have to go through a process of trial and error. Once that's done, it's eggs for everyone. The pan itself is nice and heavy and appears of good quality, though I haven't used it for anything other than the poacher yet. Very simply, you put a cup and a half or so of water in the actual pan and get it simmering, pop the poaching tray in, oil or butter the egg cups, and crack your eggs into the cups (or another vessel first if you have trouble with eggshells or broken yolks like my husband), and just let them go for the time you determined works for your stove/setup. For me personally, I set my electric stove just a tick below medium and cook the eggs for 4-5 minutes and I get very consistent eggs with runny yolks and firm whites. As long as I remember to butter the egg cups, the eggs slide right out. So much easier than the traditional way!

We purchased a set of the silicone egg poacher cups which proved to be a disaster. After researching the various poachers, we decided on this one based on the Calphalon name. We have another Calphalon pot that has been excellent, and this egg poacher is living up to the brand name. Pot is sturdy and very easy to use. The eggs took less time to cook than what was stated on the direction label, about 3 minutes for a runny yolk and tender (not rubbery) white. We used large size brown eggs which filled the cups almost to the rim - all 4 eggs finished cooking at the same time. Doubtful if an XL or Jumbo egg would work in this without discarding some of the white. Very easy to clean. It was pricier than others, but since this pot is sturdy enough to last many years it is worth the investment. HIGHLY RECOMMEND THIS PRODUCT!!!

Love this pan. A not very much cheaper one it replaced was made out of carbon steel and started to rust with the slightest scratch. one is stainless steel and the non-stick coating is the hard type that doesn't chip easily. One should still use a rubber spatula to remove the egg, but it slides right out. The other thing I like is the way the cups are picked up, use a fork through the slots and keep your hand away from the steam.
