Roasted Cauliflower Lentil Tacos
Directions:
1. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine cauliflower and olive oil. Toss until evenly coated. Season with 1 teaspoon cumin, 1 teaspoon chili powder, garlic powder and black pepper. Toss until evenly coated.
3. On baking sheet, evenly arrange cauliflower. Roast for 15 minutes, flip cauliflower, then roast for 15 more minutes. Remove from oven.
4. In a medium-sized saucepan, combine lentils and 4 cups water. Bring to a boil for 1 to 2 minutes, then drain.
5. Add onion, remaining 1 teaspoon cumin, remaining 1/2 teaspoon chili powder, bay leaf and remaining 2 cups water. Stir until well combined.
6. Over medium-low heat, simmer for 20 minutes, until water absorbs.

The highest quality of cardamom that I have ever found
The Simply Organic company is well known for their high-quality organic spices packaged in quality glass jars, and I have never been disappointed once by anything I have ever purchased from them. This cardamom in particular is the freshest pre-ground cardamom that I have ever found, and I have tried quite a few different varieties. The only way to get a better flavor is to get the whole pods and grind them yourself. This spice is the secret ingredient for a perfect rice pudding, and I also use it to make up my homemade chai batches. It is also just delightful sprinkled onto oatmeal or baked apples.----------------------------------------------------------------------Pictured here: Baked cinnamon and cardamom spiced apples, stuffed with dried cranberries and topped with a generous drizzle of homemade violet blossom syrup. 🌸Recipe-Slice apples in half and carefully cut out cores to create a 'bowl'. Place a good dollop of your favorite plant based butter in the center (Miyoko's is great, or make your own with the Gentle Chef cookbooks!), and stuff with dried cranberries or raisins. Finish filling the centers to slightly overflowing with brown rice syrup (or other simple sugar type syrup), and sprinkle with a good helping of Ceylon cinnamon and cardamom. Bake at about 400 degrees until apples become soft enough to very easily stick a fork through. Scoop up the syrup from the bottom of the pan, and top apples with the syrup and a little extra sprinkle of spices before serving.
